CHEESY CHICKEN STUFFED SHELLS
I came up with this trying to duplicate a frozen dinner from my childhood. This is my childrens' most requested dinner. I am sometimes inconsistent though and will add a can of either cream of chicken or cream of mushroom soup to the white sauce.

Tips:
- Choose the Right Pasta: For this recipe, it's best to use small pasta shells, as they hold the cheesy sauce well. However, you can substitute other small pasta shapes like penne or rotini if needed.
- Cook the Pasta Al Dente: Cook the pasta according to the package instructions, but aim for al dente (slightly firm) rather than fully cooked, as it will continue to cook in the sauce.
- Use a Good Quality Cheese: The type of cheese you use will significantly impact the flavor of the dish. Choose a sharp cheddar cheese or a blend of cheddar and Parmesan for a rich, cheesy flavor.
- Make a Roux: To ensure a smooth and creamy sauce, make a roux by melting butter and whisking in flour before adding the milk. This will help thicken the sauce and prevent it from curdling.
- Season Generously: Don't be afraid to season the sauce well with salt, pepper, and garlic powder. You can also add other herbs and spices, such as paprika, oregano, or thyme, to taste.
- Don't Overcook the Chicken: To prevent dry chicken, cook it until it reaches an internal temperature of 165°F (74°C). Overcooking will make the chicken tough and chewy.
- Serve Immediately: Cheesy chicken and shells are best served immediately, while the pasta is still hot and the cheese is melted and gooey. You can garnish with fresh parsley or chives for an extra burst of flavor.
Conclusion:
Cheesy chicken and shells is a classic comfort food dish that is easy to make and loved by people of all ages. With its creamy sauce, tender chicken, and perfectly cooked pasta, it's a meal that the whole family will enjoy. Whether you're looking for a quick and easy weeknight dinner or a special dish to serve at a gathering, cheesy chicken and shells is a surefire hit.
