- 1. Clean and trim the cauliflower; break in to pieces. Place in a microwave safe dish, add garlic, 2 tbsp of cream and 1 tbsp butter. Microwave on high for 5 to 6 minutes uncovered, remove from microwave and stir to coat cauliflower with the cream and butter mixture. Return to microwave and heat on high an additional 5 to 6 minutes uncovered.
- 2. Transfer the hot cauliflower and any cream and butter that was left in the bowl to a high speed blender. Add remaining 1 tbsp of cream, and 1 tbsp butter as well as the cheese (reserve a little of the to sprinkle on top), salt, pepper and chives. Process, scraping down sides as needed until creamy. NOTE: This dish is not as creamy as mashed potatoes. You can add a little more cream for a creamier mixture.
- 3. Transfer mixture to a serving bowl and top with a little of the shredded cheese and bacon bits. Enjoy!
