1 - 8 ounce package cream cheese, softened
3/4 cup ranch dressing
1/3 cup hot sauce
2 cups shredded, cooked chicken (or 1 - 12.5 ounce can chunk chicken breast)
1 1/2 cups shredded mozzarella cheese
1/2 cup shredded cheddar cheese
green onions, for garnish

Steps:

  • Preheat the oven to 375 degrees. Spray an 8-inch casserole dish with nonstick spray.

2 cups cooked, shredded chicken (I use a rotisserie chicken for this step)
6 ounces (about 2 cups) dry rotini pasta, cooked and drained
1 stalk celery, sliced (about ½ cup)
½ cup (about 4 ounces) grated cheddar cheese

6 tablespoons hot pepper sauce
⅓ cup olive oil
2 tablespoons garlic powder
1 tablespoon freshly ground black pepper
1 tablespoon paprika
1 ½ teaspoons salt
8 potatoes, cut into 1/2-inch cubes
2 pounds skinless, boneless chicken breast halves, cut into 1/2-inch cubes
2 cups shredded Mexican cheese blend (such as Great Value Fiesta Blend®)
1 cup crumbled cooked bacon
1 cup diced green onions

Steps:

  • Preheat oven to 500 degrees F (260 degrees C). Spray a 9x13-inch baking dish with cooking spray.
