Steps:
- Preheat the oven to 400 degrees F.
- For the topping: Add the ricotta, basil, and salt to a small bowl. Stir together with a rubber spatula. Set aside.
- For the pasta: Bring a large pot of water to boil. Season well with salt and cook the rigatoni for 5 minutes. Drain well, reserving 1/2 cup pasta water.

Stir in the marinara and 1/4 teaspoon salt until fully combined. Add the pasta to the pan and sprinkle with 1/2 cup of the Parmesan cheese. Toss well to coat. Add the reserved pasta water to thin the sauce slightly.
- Dollop the ricotta cheese mixture evenly over the top. Nestle the ricotta mixture into the pasta and cover with some of the pasta. Sprinkle with the mozzarella and remaining 1/2 cup Parmesan cheese and bake until golden brown and bubbly, about 20 minutes. Allow to sit for 5 minutes before serving.

BROCCOLI RIGATONI
As taught to me by my next-door neighbor, a lovely Italian lady who never failed to let me in on her cooking secrets as a child... I like it because it doesn't have an extra step of steaming the broccoli.

Tips:
- Cook the pasta al dente: This means that the pasta should be cooked until it is tender but still has a slight bite to it. Cooking the pasta too long will make it mushy.
- Use fresh broccoli: Fresh broccoli has a brighter flavor and a more vibrant color than frozen broccoli. If you are using frozen broccoli, be sure to thaw it before cooking.
- Don't overcook the broccoli: Broccoli should be cooked until it is tender but still has a slight crunch to it. Overcooking the broccoli will make it mushy.
- Use a good quality cheese: The type of cheese you use will greatly affect the flavor of the dish. Use a cheese that melts well and has a sharp flavor, such as cheddar, Parmesan, or Gruyère.
- Season the dish to taste: Be sure to taste the dish before serving and adjust the seasonings as needed. You may want to add more salt, pepper, garlic powder, or onion powder.
