Ham and broccoli tater tot casserole is a great ham casserole that uses leftover ham and a great twist on a favorite casserole.

1 pound of diced ham (about two cups)
1 medium onion (diced)
2 garlic cloves (diced)
8 ounces of mushrooms (sliced)
2. 10 ounce cans of cream of mushroom soup
1 pound broccoli florets
8 ounces velveeta (sliced)
32 ounce bag of tater tots or crowns
salt and pepper to taste

Steps:

  • In a deep casserole dish layer the ham, onions, garlic and mushrooms.
  • Spread the cream of mushroom soup over the sliced mushrooms and season with salt and pepper.
  • Layer the broccoli over the soup and place the sliced velveeta over the broccoli.
  • Top with the tater tots or crowns.
  • Bake on 350 for 1 hour.

1 28 - 32 oz tater tots
1 - 10.3 oz can of each - cream of broccoli & cream of celery soup
1/2 c each - milk & heavy cream
3/4 c mayonnaise
2 Tbsp dried onion flakes
1/4 tsp salt & fresh cracked black pepper
2 c cubed ham
28 - 32 oz broccoli spears or broccoli florets mine whole, can chop of you choose
8 oz ( 2 cups )- fresh shredded sharp cheddar cheese

Steps:

  • 1. Preheat oven to 350 degree F. Grease a 9 x 13 baking dish. Set aside. In a medium bowl, whisk together the soups, cream, milk, salt, pepper, dried onion and mayonnaise Evenly spread tater tots on the bottom of prepared dish. Next layer with broccoli and then ham. Spread evenly.
  • 2. Pour and spread soup mixture evenly over the top. Cover tightly with foil and bake for 25 - 30 minutes.
  • 3. Remove foil and bake another 15 minutes. Sprinkle evenly with cheese and bake until cheese is melted and browning and casserole is bubbling.
  • 4. Remove from oven, let set for 5 minutes to set up. Serve alone or perhaps with some good chewy french bread.

Tips:

  • For a crispy casserole, use frozen tater tots. They will hold their shape better than thawed tater tots.
