AWESOME BROCCOLI-CHEESE CASSEROLE

Awesome Broccoli-Cheese Casserole image

My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.

BUFFET-STYLE FLUFFY OVEN SCRAMBLED EGGS FOR A CROWD

Buffet-Style Fluffy Oven Scrambled Eggs for a Crowd image

This is the method that restaurants use to serve eggs for a buffet brunch --- for cheesy eggs mix in 1-1/2 cups shredded old cheddar cheese or you may sprinkle the cheese on top after removing from the oven --- 2-1/2 cups half and half cream and milk will produce ultra fluffy eggs, for a firmer texture reduce to 2 cups--- NOTE this recipe was tested using large eggs I cannot promise the same results using small or extra large eggs --- if you are serving these eggs at a buffet some side ideas would be salsa, green onions, cheddar cheese and soft buns :)

Time 30m

Yield 12 serving(s)

Number Of Ingredients 6

1/3-1/2 cup butter, melted
24 large eggs
1 1/2 teaspoons salt (I use seasoned salt)
fresh ground black pepper (optional and to taste) or white pepper (optional and to taste)
1 1/4 cups half-and-half cream
1 1/4 cups milk (or use 2-1/2 cups all milk)

Steps:

  • Set oven to 350 degrees F (set oven rack to lowest position).
  • Spray a 13 x 9-inch glass baking pan with cooking spray then pour the melted butter into the pan.
  • In a bowl whisk eggs and salt until smooth and well blended.
  • Gradually whisk in the half and half and milk; pour into the baking pan.
  • Bake uncovered for 10 minutes.
  • Remove the pan from the oven then stir the eggs; return to oven and bake another 15-20 minutes or until the eggs are just set (to insure soft fluffy eggs do not overbake as the eggs will cook more after removing from the oven).
  • Serve immediately.

CHEESY BROCCOLI-EGG BREAKFAST CASSEROLE

Categories     Breakfast

Time 1h10m

Yield 4-6 serving(s)

Number Of Ingredients 12

3/4-1 lb turkey sausage (casings removed or use pork sausage)
1 small onion, finely chopped
1 tablespoon fresh minced garlic (to taste) (optional)
3 cups fresh broccoli florets (cooked and well drained)
2 cups shredded 3-cheese gourmet cheddar blend cheese, divided
8 large eggs, lightly beaten
1 cup ricotta cheese
1/4 cup half-and-half cream or 1/4 cup milk

1 -2 firm plum tomato, thinly sliced

Steps:

  • Set oven to 350 degrees.
  • Butter an 11 x 7-inch baking dish.
  • In a skillet cook the turkey sausage or pork sausage meat with onion and garlic (if using) until the meat is no longer pink; drain fat and transfer to a large bowl.
  • Toss together the sausage with cooked broccoli and about 1/2 cup three-cheese blend; spoon the mixture into the prepared baking dish.
  • In a bowl whisk eggs, add in 1/2 cup shredded three-cheese blend, ricotta, half and half cream, salt, pepper and cayenne (if using) pour over the broccoli mixture in the baking dish.
  • Sprinkle the remaining 1 cup cheddar (or to taste) cheese, then arrange the tomato slices on top.
  • Bake covered for 30 minutes; uncover and continue to bake for another 10-15 minutes more.

Tips:

  • Prep the Broccoli Right: Cut the broccoli florets into uniform sizes to ensure even cooking. Steaming the broccoli beforehand helps retain its vibrant green color and crisp texture.
  • Use Fresh Ingredients: Opt for fresh, high-quality ingredients for the best flavor and texture. Fresh eggs, sharp cheddar cheese, and creamy milk will elevate the dish.
  • Don't Overmix: Gently whisk the eggs and milk together until just combined. Overmixing can result in a tough, rubbery texture.
  • Add-Ins and Substitutions: Feel free to customize the recipe with your favorite add-ins. Diced ham, crumbled bacon, or sautéed mushrooms are great additions. You can also substitute other types of cheese, such as mozzarella or Gruyère.
  • Cook Until Golden: Bake the egg casserole until the top is golden brown and a toothpick inserted in the center comes out clean. This ensures that the dish is cooked through.
  • Serve Immediately: Cheesy broccoli egg bake is best enjoyed fresh out of the oven. Serve it with a side of fresh fruit or a simple green salad for a complete brunch or breakfast.

Conclusion:

This cheesy broccoli egg bake is an easy-to-make, crowd-pleasing dish perfect for brunch, breakfast, or even dinner. With its simple ingredients, customizable variations, and delicious flavor, it's sure to become a favorite in your recipe repertoire. The combination of tender broccoli, gooey cheese, and fluffy eggs makes it a satisfying and wholesome meal.
