1 large Egg
1 1/2 cup Mozzarella cheese
2 cloves Garlic ((minced, optional))
3/4 tsp Sea salt

Steps:

  • Stir fry cauliflower rice in 2 tbsp (30 mL) oil in a large saute pan or wok over medium-high heat, until soft and lightly browned, with no moisture left in the pan.
  • Meanwhile, whisk the egg in a large bowl. Mix in the mozzarella, garlic, and sea salt.

  • Preheat oven to 400-degrees Fahrenheit
  • In a food processor, pulse the cooked and cooled vegetables along with the salt and pepper until creamy, but still slightly chunky.

1 medium head cauliflower (about 2 pounds)
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 3/4 cups milk
2 cups shredded sharp cheddar cheese
1 tablespoon Dijon mustard
1 (4 1/4 ounce) can diced green chilies, drained (to taste, I use 1/3 can)
1/4 teaspoon hot pepper sauce
1/8 teaspoon salt
additional milk, if needed, to thin sauce

Steps:

  • Cut broccoli and cauliflower into florets, discarding outer leaves and stems.
  • You should have about 8 cups broccoli florets and 4 cups cauliflower.
  • In a large pot, bring 8 cups of lightly salted water to a boil.
  • Add cauliflower; cook 2 minutes.
  • Add broccoli; cook an additional 6 minutes or until vegetables are crisp tender. Drain.
  • While vegetables are cooking, make Cheese Sauce:.

8 ounces cauliflower florets
5 tablespoons vegetable oil, divided
3/4 teaspoon kosher salt, divided
1/2 cup shredded Parmesan (about 1 ounce)
1/2 cup shredded sharp cheddar (about 1 ounce)
1 garlic clove, finely chopped
3 tablespoons chopped chives
1/4 teaspoon freshly ground black pepper
1 1/2 cups panko (Japanese breadcrumbs), divided
Nonstick vegetable cooking spray
1 cup all-purpose flour
3 large eggs
Ketchup, for serving

Steps:

  • Pulse carrots and cauliflower in a food processor (or grate carrot on smallest holes and cauliflower on largest holes of a box grater) until rice-like in texture.
