- In food processor, combine the flour, salt, cayenne and baking powder.
- Pulse several times to mix.
- Add the butter and cheese, then pulse for about 30 seconds, or until the ingredients are well mixed (it should resemble slightly moist flour).

- Heat water to 105-110 degrees farenhight, add yeast and proof.
- Combine flour, powdered milk, sugar, and olive oil in a bowl.
- Split 1 1/2 cups of grated cheddar cheese in two. Place one half of the cheese in the flour mixture and the other half in a separate bowl.
- In a standing mixer place flour mixture and proofed yeast. Mix on low speed for about 5-8 minutes.
- Form into a ball and let rise for 1 hour.
- Add 1/4 cup grated parmesan cheese to the the other half of the cheddar cheese. Then add the panko bread crumbs, sesame seeds and salt. Set aside.
- In a separate bowl add melted butter and minced garlic. let stand for at least 30 minutes to let garlic flavor incorporate with the butter.
- After dough has risen (doubled in size) split into 32 pieces, and roll out into breadstick shape.
- Take one of the breadsticks a with a pastry brush, brush with the melted butter and garlic. Then roll into the breadcrumbs and cheese mixture.
- Place on a pan and repeat with the remaining sticks.

- 1. In the bowl of a stand mixer, combine hot water, yeast and honey; proof for 8 to 10 minutes or until foamy.
- 2. In the meantime, combine in a medium bowl, 2 cups flour, Italian seasoning, garlic powder and salt; whisk to mix and set aside.
- 3. Insert dough hook attachment and add about 2 cups flour mixture to the yeast (reserve ½ cup). Mix on speed 2 for 2 minutes. Increase to speed 3 and continue mixing by adding 1 tbsp. of remaining flour at a time until dough forms a ball and clings to the dough hook, cleaning the sides of the bowl. Increase speed to 4 and knead for 4 minutes.
- 4. Form a ball by pulling dough under and placing it in a bowl lightly greased with oil; toss dough to coat. Cover with a clean kitchen towel and place it in a draft free spot such as an unheated oven. Let it rise for 30 minutes.
- 5. Later, punch dough to deflate it and transfer to a work surface lightly floured. Stretch dough to about a 18 X 12-inch rectangular shape, flouring rolling pin and dough as well. If it stretches back, wait a couple minutes to let the gluten relax.
- 6. Pour on melted butter and brush on evenly. Sprinkle evenly with garlic salt, paprika, parmesan and asiago cheese - or use what you like.
- 7. Using a pizza cutter, slice dough in half and then divide each half into 9 long strips of 1-inch wide. Take one at a time and place it on a large baking sheet lined with a silicone mat. Twist each, starting from the middle and working your way out to each end.
- 8. Transfer straws to a 375ºF preheated oven and bake for 18 minutes. Half way through cooking, rotate them to cook evenly. Remove from the heat and serve immediately. Makes 18 breadsticks
