Steps:
- Whisk the warm water and yeast together in the bowl of your stand mixer fitted with a dough hook attachment. Cover and allow to sit for 5 minutes.
- Add the flour, brown sugar, and salt. Beat on low speed for 2 minutes. The dough is very stiff and will look somewhat dry.
- Turn the dough out onto a lightly floured surface. With lightly floured hands, knead the dough for 4-5 minutes. The dough is too heavy for the mixer to knead it!
- Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise at room temperature for 60-90 minutes or until double in size.
- Line two large baking sheets with parchment paper or silicone baking mats.
- When the dough is ready, punch it down to release any air bubbles. Divide the dough into 8 equal pieces. (Just eyeball it- doesn't need to be perfect!) Shape each piece into a ball. Press your index finger through the center of each ball to make a hole about 1.5 - 2 inches in diameter. Watch video above for a visual. Loosely cover the shaped bagels with kitchen towel and rest for a few minutes as you prepare the water bath.
- Preheat oven to 425°F (218°C).
- Fill a large, wide pot with 2 quarts of water. Whisk in the honey. Bring water to a boil, then reduce heat to medium-high. Drop bagels in, 2-4 at a time, making sure they have enough room to float around. Cook the bagels for 1 minute on each side.
- Using a pastry brush, brush the egg wash on top and around the sides of each bagel. Place 4 bagels onto each lined baking sheet. Bake for 20-25 minutes, rotating the pan halfway through. You want the bagels to be a dark golden brown. Remove from the oven and allow bagels to cool on the baking sheets for 20 minutes, then transfer to a wire rack to cool completely.
- Slice, toast, top, whatever you want! Cover leftover bagels tightly and store at room temperature for a few days or in the refrigerator for up to 1 week.

Steps:
- This recipe is for a two-pound bread machine. Use the dough setting.
- Follow the instructions that came with your bread machine in terms of which ingredients to put in the bread machine first. With my Zojirushi bread machine, I add the liquids first.
- Use the dough setting.
- Check the dough after five or ten minutes of kneading. You'll want the dough to form a smooth, round ball. If the dough is too dry add liquid a teaspoon at a time until the dough balls up. If it looks too wet, add flour a tablespoon at a time until it looks as expected.
- When the cycle is done, remove the dough from the machine and let it rest on a lightly floured surface.
- While the dough is resting bring 3 quarts (12 cups) of water to a medium boil in a large pot. Stir in 3 tablespoons of sugar. The sugar helps to make the bagel crust a little crisper.
- This is also a great time to make the egg wash so you have that ready when needed. Beat the egg white and the water together. Then put it aside for later.
- Divide the dough into 10 equal sections. I use my bench scraper to help divide the dough. Roll each piece into a ball.
- Flatten balls. (I use the bench scraper for this too.) Poke a hole in the middle of each dough ball with your thumb. To get the final bagel shape, I kind of roll the dough away from the hole. Whatever method works for you is fine.
- Cover bagels with a clean towel and let rest for 10 minutes.
- Line a baking sheet with parchment paper. (Greasing the baking sheet would work fine too.) Then you're ready to boil the bagels!
- I boil 2 or 3 of them at a time. I use a slotted (flat) spatula to move the bagels to boiling water. Boil for them for 1 minute, 30 seconds on each side. Then move them to a wire rack with a paper towel underneath.
- Once all the bagels have been boiled, move them to the baking sheet. Apply the egg wash with a pastry brush.
- Bake in a preheated 375 degree oven for 20 to 25 minutes, until browned.

Steps:
- Measure first 5 ingredients into bread machine in the order recommended by the manufacturer.
- Select dough setting.
- When cycle is completed, remove the dough from the machine.
- Place dough on a floured surface.
- Divide into 10 parts.
- Form into balls, gently press thumb through center of ball and slowly stretch into bagel shape.
- Place on a greased baking sheet, cover with a damp cloth and set in a warm place to rise.
- Bring three quarts of water and one tablespoon of sugar to a rapid boil in a large sauce pan.
- Using a slotted spoon, drop 2 to 3 bagels into rapidly boiling water.
- Boil on each side for 1 to 2 minutes.
- Remove and cool on wire rack 1 minute.
- Brush with egg wash and sprinkle with sesame or poppy seeds, if desired.
- Bake at 400 degrees on a baking sheet sprinkled with cornmeal until golden.
Tips:
- Use the correct type of flour: Bread flour is ideal for bagels because it has a high protein content, which gives the bagels a chewy texture. If you don't have bread flour, you can use all-purpose flour, but the bagels may be less chewy.
- Use fresh yeast: Active dry yeast or instant yeast can be used in this recipe. If you're using active dry yeast, you need to proof it in warm water before adding it to the bread machine. Instant yeast can be added directly to the bread machine.
- Don't overproof the dough: The dough should be allowed to rise until it has doubled in size, but don't let it overproof or the bagels will be dense.
- Boil the bagels before baking: This step is essential for giving bagels their characteristic chewy texture. The bagels should be boiled for 30 seconds to 1 minute per side.
- Bake the bagels at a high temperature: The bagels should be baked at 450 degrees Fahrenheit for 15-20 minutes, or until they are golden brown.
Conclusion:
These cheesy bread machine bagels are a delicious and easy way to enjoy fresh, homemade bagels at home. With a few simple ingredients and a bread machine, you can have warm, fluffy bagels in no time. Whether you enjoy them plain, with butter, or topped with your favorite spreads, these bagels are sure to be a hit!
