1 lb ground beef
1 pkg taco seasoning mix (any brand)
1 medium onion, chopped
1 clove garlic, minced
1 can(s) 12-oz tomato paste (15 oz can of tomato sauce may substitute for paste and water)
1 c water
1 can(s) 4-oz chopped green chiles, drained
1/2 c sliced ripe olives
1/2 tsp salt
2 whole eggs
2 c cottage cheese (16 oz)
8 oz monteray jack cheese, shredded (or queso)
10 oz corn tortillas, quartered (can use chips if desire)
1 c shredded cheddar cheese
1 small carton sour cream

Steps:

  • 1. Crumble and saute meat with onion and garlic till browned in a cast iron skillet (or equivalent) Add the taco seasoning according to the packet instructions
  • 2. Add tomato paste, water, chilies, olives and salt -- simmer till bubbly
  • 3. In a separate bowl, beat eggs, add the cottage cheese and set aside
  • 4. LAYER in 9x14 baking dish: 1/3 meat, 1/2 of jack cheese, 1/2 cottage cheese, 1/2 tortillas REPEAT: ending with meat on top
  • 5. Sprinkle top with cheddar cheese and Spanish olives
  • 6. Bake 350, about 20-25 minutes -- till cheese is melted on top and casserole is heated through (will be a little bubbly)
  • 7. Use the sour cream as a garnish when serving. Serve with fresh green salad to complete the meal.
  • 8. NOTE: I often use a 15 oz can of tomato sauce rather than the tomato paste and water because it speeds things up and tastes just as good.

This casserole tastes similar to lasagna. Serve with a side order of salad. I also add in one can undiluted tomato soup with the tomato sauce, but that is optional! with the tomatoes!.

4 cups uncooked medium egg noodles (I just use one bag)
3 tablespoons butter
1 lb ground beef
1 onion, chopped
1 tablespoon fresh minced garlic (to taste)
1 teaspoon cayenne (or to taste) or 1 teaspoon dried red pepper flakes (or to taste)
1 cup canned mushroom slices, drained (or to taste, I just use the whole can)
1/4 cup grated parmesan cheese
2 (8 ounce) cans tomato sauce
1 (8 ounce) package cream cheese, softened
1 cup small curd cottage cheese
1/2 cup grated parmesan cheese
3 green onions, chopped
1 small chopped green pepper
salt and pepper
grated mozzarella cheese or cheddar cheese, for topping

Steps:

  • Set oven to 350 degrees.
  • Grease a 13x9 baking dish.
  • Cook noodles in a large pot of boiling water; drain and toss with 3 tablespoons butter.
  • Place half of the cooked noodles in the baking dish.
  • Meanwhile, in a skillet, cook ground beef, onion, garlic and cayenne and mushrooms, over medium heat until meat is no londer pink; drain.
  • Add tomato sauce and 1/4 cup Parmesan cheese; simmer for about 30 minutes seasoning with salt and pepper to taste.
  • In a mixing bowl, combine cream cheese, cottage cheese, 1/2 cup Parmesan, green onions and green peppers, then spread half of the mixture on top of the cooked noodles.
  • Top with half of the meat and cheese mixtures.
  • Repeat the layers.
  • Cover and bake for 20 minutes.
  • Uncover and sprinkle with grated cheese.
  • Place back in the oven to bake for about 10-15 minutes or until the cheese is melted and the casserole is bubbley.

1 pound lean ground beef (I used 93/7)
1 medium onion, chopped (1/2-cup)
1 1/2 teaspoons garlic powder
Salt and black pepper, to taste
1 (8-ounce) can tomato sauce (I use Hunt's)
1/2 cup chicken broth (I dissolved 1/2 teaspoon chicken bouillon granules in 1/2 cup boiling water)
1 1/2 cups cooked rice
1 cup cooked whole kernel corn
1 (8-ounce) package shredded cheddar cheese (2-cups), divided

Steps:

  • Lightly spray an 8x8-inch casserole dish with cooking spray. Set aside. Partially brown ground beef seasoned with half the garlic powder, salt, and pepper in a large skillet over medium-high heat. When meat starts to brown, stir in the onions and continue to cook until onions are tender, stirring constantly. Remove from heat and drain off any excess fat. Preheat oven to 350°F. Set the skillet back on the warm burner (no need to turn it on) and stir in the tomato sauce until incorporated, then stir in the broth. Stir in the rice, corn, additional seasonings to taste, and 1 cup of the shredded cheese. Pour mixture into the prepared casserole dish. Bake for 20 minutes. Remove from oven and top with the remaining cup of cheese. Return to oven and bake for another 15 minutes, or until hot and cheese is melted. Serve immediately.

2 tablespoons canola oil, divided
1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
2 (14.5 ounce) cans diced tomatoes, drained
1 (14.5 ounce) can tomato sauce
½ cup heavy cream
3 tablespoons chopped fresh basil, divided
1 ½ cups ricotta cheese
1 tablespoon olive oil
½ teaspoon salt
¼ teaspoon ground black pepper
1 ½ pounds frozen cheese tortellini, slightly thawed
2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Heat 1 tablespoon canola oil in a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Remove ground beef with a slotted spoon. Drain and discard the grease; wipe the skillet clean with a paper towel.
  • Heat 1 tablespoon canola oil in the same skillet over medium-high heat until just smoking. Reduce heat to medium and add onion. Cook, stirring frequently, until onion is just browning, about 5 minutes. Add garlic and cook for 30 seconds. Add diced tomatoes and tomato sauce. Cook, stirring occasionally, until sauce begins to thicken, 10 to 12 minutes. Stir in cream and 2 tablespoons basil; cook until thick, about 2 minutes.
  • While the sauce is cooking, combine ricotta cheese, olive oil, remaining basil, salt, and pepper in a bowl.
  • Remove tomato sauce from the heat. Add ground beef and tortellini; stir to combine.
  • Spread 1/2 of the beef-tortellini sauce mixture on the bottom of the prepared baking dish. Layer with the ricotta cheese mixture, the remaining sauce mixture, and the mozzarella cheese. Cover with aluminum foil.
  • Bake in the preheated oven until bubbling, about 30 minutes. Sprinkle with Parmesan cheese. Let rest for 5 minutes before serving.

2 onions, diced
2 teaspoons garlic powder
1 small can tomato sauce
1 cup cooked rice
1 cup chicken broth
1 cup sour cream (I use fat free)
2 cups shredded cheese
salt, pepper, oregano
1 cup frozen peas

Steps:

  • 1.Preheat oven to 350° F. 2.Spray a skillet with cooking spray and turn on the heat to high. 3.Roast the onions for a few minutes. 4.Add ground beef and garlic, brown the ground beef completely, turn heat to medium. 5.Spice with salt, pepper and oregano how you like it. 6.Add rice, peas tomato sauce, 1 cup cheese and broth, let simmer for 3 minutes. 7.Transfer everything into a casserole dish and bake for 15 minutes. 8.Meanwhile combine the rest of the cheese with the sour cream. 9.After 15 minutes bring the cheese/sour cream mixture on top of you casserole and bake for another 15 minutes.

Tips:

  • For a richer flavor, use a combination of ground beef and ground sausage.
  • If you don't have cream of celery soup, you can use cream of mushroom soup or cream of chicken soup instead.
  • To make the casserole cheesier, add an extra cup of shredded cheddar cheese.
