1 cup red enchilada sauce
1 cup canned black beans, (drained)
2 cups white rice, (cooked)
1 cup cheddar cheese, (grated)
1 cup Monterey Jack cheese with jalapenos, (grated)
3/4 cup whole kernel corn, (drained)
Cilantro for garnish ((optional))

Steps:

  • Preheat the oven to 350° F.
  • Combine the enchilada sauce, beans, cooked rice, 1/2 cup of cheddar, 1/2 cup Monterrey Jack and 1/2 cup of corn in a large bowl. Mix well. Place the mixture in an 8x8 casserole. Sprinkle with the rest of the cheese and corn.

1 cup salsa, store-bought or homemade
Juice of 1 lime
2 tablespoons chopped fresh cilantro leaves
1 (15-ounce) can black beans, drained and rinsed
3/4 cup shredded cheddar cheese
3/4 cup shredded mozzarella cheese

Steps:

  • Preheat oven to broil. Lightly oil an 8×8 or 2 quart baking dish or coat with nonstick spray. In a large saucepan of 2 cups water, cook rice according to package instructions. 1 Tbsp extra virgin olive oil
1/2 oz onion, finely chopped
2 clove garlic, minced
1 small bell pepper, seeded and finely chopped (use whatever color you prefer)
1 can(s) (4 oz.) diced green chilis, undrained
1 can(s) petite diced tomatoes, undrained
1 c uncooked long grain white rice
2 c vegetable broth
2 tsp chili powder
1 tsp cumin
1/2 tsp turmeric
salt & pepper to taste
1 can(s) (15 oz.) kidney beans, drained & rinsed
1 can(s) (15 oz.) black beans, drained and rinsed
1 c frozen corn
1/4 c fresh, chopped cilantro
1 c shredded cheese (whatever you like) we prefer colby-jack for this dish

Steps:

  • 1. In a deep iron skillet, heat olive oil. Saute onions and peppers until softened. Add garlic and cook another min.
  • 2. Add rice and spices (not cilantro). Saute until browned and fragrant.
  • 3. Add green chilis and tomatoes and vegetable broth to pan. Stir to combine.
  • 4. Lower heat, cover and cook for about 20-25 minutes until rice is done.
  • 5. When rice finishes cooking, add beans, corn and chopped fresh cilantro Stir to combine.
  • 6. Add more salt & pepper and/or spices to taste if needed.
  • 7. Topped with grated cheese and move to oven. Bake at 350 for 5 minutes or just until cheese is melted.

1 (15 ounce) can kidney beans (do not drain) or 1 (15 ounce) can pinto beans (do not drain)
4 cups cooked brown rice
1 cup sharp cheddar cheese, shredded

  • In large skillet heat oil on medium heat. Add green peppers, onions and garlic. Cook until tender.

1 tablespoon olive oil
1 small yellow onion, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 cup mild salsa
1 (15 oz.) can black beans, drained
1 cup long grain white rice, rinsed well
2 cups water
2 cups grated cheddar cheese
Salt and pepper
Avocado, garnish
Fresh cilantro, garnish
Flour tortillas, optional for serving

Steps:

  • In a large cast iron skillet, add olive oil over medium heat. Add onions and garlic and cook until veggies soften, 3-4 minutes. Then add salsa and stir together. Season mixture with cumin and a pinch of salt and pepper.
  • Rinse rice well under cold water until the water runs clear. Then add rice to the skillet along with drained and rinsed black beans. Stir together well.
  • Add water (or stock) to the skillet and bring to a slight simmer. Turn heat down to low and cover. Cook rice and beans for 15-18 minutes until rice is cooked and water is evaporated. Stir once or twice during cooking to make sure the rice isn't clumping or cooking too quickly. If the rice and beans seems particularly dry, add another 1/2 cup of liquid.
  • When rice and beans are cooked and the rice is tender, stir mixture with a fork and season to your taste with salt and pepper.
  • Dot the top of the rice and beans with handfuls of cheddar cheese and cover with lid. Residual heat should melt the cheese, but if you've waited too long, you can also stick the skillet in a 350 degrees F. oven for a few minutes to melt the cheese really well (that's my preference).
  • Garnish skillet with sliced avocado and fresh cilantro and serve while warm.
  • The cheesy rice and beans works great as a hearty side dish OR you can serve it with flour tortillas to make it an entree.
