CHEESY BAKED CAULIFLOWER

I got this from a garden club friend. I was not a cauliflower fan but this changed my mind. Super easy and gets raves from everyone.

Categories     Vegetables

Number Of Ingredients 4

1 bunch cauliflower
1/2 c dijon mustard
1/2 c mayonnaise
3/4 c sharp cheddar cheese

Steps:

  • 1. Steam whole head of cauliflower and then cut into chunky pieces....it is easier to cut once cooked. Place into a casserole sprayed with cooking spray.
  • 2. Mix Dijon mustard and mayonnaise together and pour over the cauliflower. Toss to give a good coating.
  • 3. Sprinkle the cheese over the top and bake at 350degrees for about 20 minutes. The top should be slightly toasted looking. This is super easy and quick. I am not a cauliflower fan but love this version.

Tips:

  • Choose the right cauliflower: Look for a head of cauliflower that is compact and heavy for its size, with tightly packed florets and no signs of bruising or blemishes.
  • Cut the cauliflower into uniform florets: This will help them cook evenly. You can use a sharp knife or a food processor to cut the cauliflower.
  • Blanch the cauliflower before baking: This will help to tenderize the cauliflower and prevent it from becoming mushy. To blanch the cauliflower, bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 2-3 minutes, or until they are tender-crisp. Drain the cauliflower and immediately place it in a bowl of ice water to stop the cooking process.
  • Use a variety of cheeses: This will give your casserole a more complex flavor. You can use a combination of cheddar, mozzarella, Parmesan, and/or Gruyère cheese.
  • Add other vegetables: Such as broccoli, zucchini, or carrots, to your casserole. This will make it a more nutritious and colorful dish.
  • Season the casserole well: With salt, pepper, and other spices. This will help to bring out the flavors of the cauliflower and the cheese.
  • Bake the casserole until it is golden brown and bubbly: This will take about 20-30 minutes.

Conclusion:

Cheesy baked cauliflower is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is a great way to get your daily dose of vegetables, and it is also a good source of protein and calcium. With its creamy cheese sauce and crispy cauliflower florets, this casserole is sure to be a hit with the whole family.
