4 medium bell peppers
1 tablespoon olive oil
1 (12 ounce) package frozen riced cauliflower
1 pound lean ground beef
1 medium red onion, chopped
½ cup reduced-sugar ketchup
1 tablespoon yellow mustard, or to taste
1 tablespoon dill pickle relish, or to taste
1 ½ cups shredded reduced-fat Cheddar cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Slice peppers in half lengthwise. Remove and discard core and seeds. Place peppers in a baking dish.

1/2 pound ground beef
1/4 cup finely chopped onion
2 cups cooked brown rice
1 can (6 ounces) tomato paste
2 tablespoons ketchup
1 tablespoon Worcestershire sauce

1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 cup vegetable broth
