1/2 pound ground beef
1 small onion, finely chopped
2-1/2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup ketchup
3/4 cup 2% milk
1/2 cup butter, melted
2 large eggs
1 teaspoon prepared mustard
2 cups shredded cheddar cheese

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. , In a small bowl, combine the flour, sugar, baking powder and salt. In another bowl, combine the ketchup, milk, butter, eggs and mustard; stir into the dry ingredients just until moistened. Fold in the beef mixture and cheese. , Fill greased miniature muffin cups three-fourths full. Bake at 425° until a toothpick comes out clean, 15-18 minutes. ¾ cup milk

1 tablespoon yellow mustard

I added more breadcrumbs and subtracted some of the moist ingredients to get this recipe turned into something not quite so disappointed (but at least the cooked tops tasted good!).

2 whole eggs, beaten or 1/2 cup egg white
3/4-1 cup breadcrumbs or 3/4-1 cup whole wheat breadcrumbs
1/2 cup mayonnaise (or 1/2 c low-fat mayo)
1/8 cup Worcestershire sauce
1 cup shredded sharp cheddar cheese or 1 cup low-fat cheddar cheese
1 cup ketchup, Divided
1/2 cup yellow mustard, Divided
1 (3 ounce) package bacon bits
1/4 cup packed brown sugar
1 cup French-fried onions

Steps:

  • Preheat oven to 375°F.
  • Spray a muffin tin with nonstick cooking spray.

These have been one of my family's favorite way to eat a cheese burger. These are great frozen so make a bunch and have them on hand when company drops by. Can be made in regular muffin tins - bake this size for 20 minutes- you should get about 2 dozen. They go fast so make more than one batch.

1 small onion, finely chopped
2 1/2 c flour
1 Tbsp brown sugar
2 tsp baking powder
1 tsp seasoned salt
3/4 c ketchup
3/4 c evaporated milk
1/2 c butter or margarine, melted
2 large eggs
1 tsp prepared dry mustard
2 c shredded cheddar cheese

Steps:

  • 1. In a skillet , cook and scramble beef and onion over medium heat until meat is no longer pink; drain. In a bowl combine the flour, sugar, baking powder, mustard and salt. In your mixer bowl, combine ketchup, milk, margarine and eggs; mix in dry ingredients just until moistened. Fold in the beef mixture and cheese. Fill greased mini-muffin cups 3/4 full.
