I created this meat loaf one day when I wanted to make cheeseburgers-my husband's favorite-but it was too chilly to grill outside. I've served it numerous times since then, and it never fails to get rave reviews. Even your most finicky eater will enjoy this oven-baked main dish. 1/2 cup ketchup, divided
1 egg
1/4 cup dry bread crumbs
1 teaspoon onion powder
1 pound lean ground beef (90% lean)
2 teaspoons prepared mustard
2 teaspoons dill pickle relish
6 slices process American cheese

Steps:

  • In a bowl, combine 1/4 cup ketchup, egg, bread crumbs and onion powder. Crumble beef over mixture and mix well. On a large piece of waxed paper, pat beef mixture into a 10x6-in. rectangle. Spread remaining ketchup over meat to within 1/2 in. of long sides and 1-1/2 in. of short sides. Top with mustard and relish., Place four cheese slices on top; set remaining cheese aside. Roll up loaf, jelly-roll style, starting with a short side and pulling away waxed paper while rolling. Seal seams and ends well. Place loaf, seam side down, in a greased 11x7-in. baking pan., Bake at 350° for 45 minutes or until meat is no longer pink and a thermometer reads 160°. Cut the reserved cheese slices in half diagonally; place on top of loaf. Return to the oven for 5 minutes or until cheese is melted. Let stand for 10 minutes before slicing.

4 slices bacon
1 1/2 pounds lean ground chuck or ground round
1 cup firm fresh white bread crumbs
1 cup coarsely shredded sharp Cheddar cheese (4 ounces)
1 large sweet onion, such as Vidalia, chopped
2 tablespoons mayonnaise
2 tablespoons India or other sweet pickle relish
2 teaspoons dry mustard
3/4 teaspoon salt
1/2 teaspoon freshly ground pepper
1 egg
1/4 cup ketchup

Steps:

  • Preheat the oven to 350°F. In a medium skillet, cook the bacon over medium heat until limp and some of the fat is rendered, 3 to 4 minutes. Remove the bacon from the skillet and reserve it.
  • In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, 1/2 cup of the cheese, onion, mayonnaise, relish, mustard, salt, pepper, and egg. Pat the mixture into a shallow 2-quart baking pan. Spread the top of the loaf with ketchup, then lay the bacon strips over the ketchup. Bake until the loaf is firm and the bacon is crisp, 45 to 50 minutes, sprinkling the top the loaf with the remaining 1/2 cheese to melt during the last 5 to 10 minutes of baking. Let the meatloaf stand in the baking dish for 10 minutes, then cut into squares to serve.

1 small onion, chopped
2/3 cup shredded cheddar cheese
1/3 cup shredded mozzarella cheese
1/4 cup ketchup
1-1/2 teaspoons salt, divided
1/4 teaspoon pepper
1-3/4 cups all-purpose flour
1 tablespoon baking powder
1/4 cup shortening
3/4 cup milk

Steps:

  • In a skillet, cook beef over medium heat until no longer pink; drain. Add onion, cheeses, ketchup, 1/2 teaspoon salt and pepper; set aside. In a bowl, combine the flour, baking powder and remaining salt. Cut in shortening until mixture resembles coarse crumbs. Using a fork, stir in milk until mixture forms a ball.
