KIELBASA, KALE, TORTELLINI SOUP
I think this is from Bon Appetit four or five years ago. Warm and comforting...and hearty. A meal in itself with some good bread.

CHEESE TORTELLINI AND KALE SOUP
A steaming bowl of this hearty soup is always a welcomed dish with both my family and neighbors. I often serve it when we get together during the cold months to watch football games. I add crusty bread, sliced cheese and grapes to round out the meal. -Marlena Liimatainen, Denton, Maryland

Steps:
- Heat the olive oil in a large Dutch oven over medium-high heat. Add the kielbasa, garlic, onion, thyme, and red pepper flakes and saute until browned, about 12 minutes. ( I threw the garlic in after about 8 minutes of cooking.. didn't want it to burn.) Add the broth and tomatoes and bring to a boil . Reduce heat to low and simmer for 15 minutes. Add the beans and tortellini to the soup. Simmer until the pasta is just tender to the bite, about 10 minutes. Stir the spinach into the soup and turn off the heat; let stand for about 2 minutes. Ladle the soup into bowls and sprinkle with Parmesan cheese before serving. ** Please note , add tortellini at another time if you aren't going to eat this all right away. It will become mushy if stored and absorbs some of the soup. I recommend boiling it as needed al dente, then throwing it in the soup for a couple of minutes.
Tips:
- Choose the Right Tortellini: Select cheese-filled tortellini for a creamy and flavorful soup. Fresh or frozen tortellini works well.
- Prep the Vegetables: Chop the vegetables into bite-sized pieces for even cooking and a delicious texture.
- Brown the Sausage: Browning the sausage adds depth of flavor to the soup. Use a large pot or Dutch oven to prevent overcrowding.
- Use Quality Broth: Choose a flavorful broth, such as chicken broth or vegetable broth, to enhance the soup's taste.
- Season to Taste: Adjust the seasonings, such as salt, pepper, and garlic powder, to your preference.
- Add the Tortellini Last: Add the tortellini towards the end of the cooking process to prevent overcooking.
- Garnish Before Serving: Garnish the soup with freshly chopped parsley, grated Parmesan cheese, or a drizzle of olive oil for an extra touch of flavor and color.
Conclusion:
This creamy and flavorful cheese tortellini soup with cannellini beans, kielbasa, and kale is a hearty and satisfying meal. The combination of tender tortellini, savory sausage, hearty beans, and nutritious kale creates a delightful and well-balanced dish. It's perfect for a cozy dinner on a chilly day or as a comforting lunch option. With its easy-to-follow steps and customizable ingredients, this soup is sure to become a favorite in your kitchen.
