4 small or medium sized sweet potatoes (halved lengthwise (ends trimmed))
1/4 cup Garlic Butter (melted)
Sea salt (to taste)
Black pepper (to taste)
3/4 cup shredded Mozzarella cheese
1/2 cup Parmesan cheese (fresh grated)
2 tablespoons dried or fresh chopped parsley

Steps:

  • Heat oven to 220°C | 425°F. Brush the potatoes with the garlic butter and season each potato with salt and pepper. Arrange cut-side down on a lightly greased baking sheet until golden brown and the flesh is tender (about 20-30 minutes, depending on your oven).
  • Remove them from the oven, flip them cut-side up (skin side down) and top with the mozzarella, parmesan and parsley.
  • Change oven settings to broil on low or medium heat and broil until the cheese is golden and melted (about 2 minutes). Sprinkle with more salt and pepper, if desired. Serve warm.

1 tablespoon of butter
1 shallot
2 garlic cloves, minced
1/2 cup heavy cream
3/4 cup 2% milk
2 teaspoons fresh thyme, diced
1 teaspoon fresh tarragon, diced
1/2 teaspoon sea salt
1 cup shredded gruyere cheese

Steps:

  • Preheat oven to 400 degrees.
  • Spray the bottom of a 13×9″ baking dish with Cooking Spray. Set aside.
  • Using a mandoline, slice sweet potatoes to 1/3″ thick. (if you do not have a mandoline, use a very sharp knife to slice)
  • Add half the sweet potatoes to the greased baking dish.
  • In the meantime, heat a small sauce pan to medium high heat. Add butter and shallots to pan. Saute until translucent, about 3-4 minutes. Next add in the garlic and saute for 30 seconds. Then add in the heavy cream, milk, fresh thyme, fresh tarragon, and sea salt and stir. Bring a boil and then remove from heat.
  • Pour half the milk mixture over the sweet potatoes. Top with half the gruyere cheese.
  • Add another layer of the remaining sweet potatoes, top with remaining milk mixture and cheese.
  • Cover with tin foil.
  • Bake for 30 minutes.
  • Remove the tin foil and bake an additional 25-30 minutes, or until sweet potatoes are tender.
  • Optional: top with a garnish of fresh thyme

½ cup white sugar
2 eggs, beaten
½ teaspoon salt

3 tablespoons butter, softened
½ cup chopped pecans

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash.

500g sweet potatoes
125g butter, plus extra for the dish
125g light brown soft sugar
150ml whole milk
3 eggs
grating of nutmeg
½ tsp ground cinnamon
1 tsp vanilla bean paste
35g butter
75g plain flour
75g light brown soft sugar
50g pecans, chopped

Steps:

  • Fill a large pan with boiling water from the kettle and set over a medium-high heat. Carefully drop in the whole, unpeeled sweet potatoes and cook for 30 minutes until very tender when pierced with the tip of a sharp knife. Drain well and leave to cool for 10 mins, then peel.
  • Heat the oven to 180C/160C fan/gas 4. Tip the peeled sweet potatoes into a large bowl, add the butter and mash with a potato masher until completely smooth. Tip in the brown sugar, milk, eggs, spices and vanilla and whisk until everything is combined and smooth.

1/2 cup chicken stock
40 g butter
1/4 cup plain flour

1/2 cup whole wheat bread crumbs
1/4 cup grated low-fat cheese

Steps:
