Don't use butter instead of lard; the texture is too soft and it won't cream properly. If you must substitute, use vegetable shortening.

6 ounces corn husks
1 lb cooked chicken meat, shredded
8 ounces canned diced green chiles
10 ounces queso fresco, crumbled
2 jalapeno peppers, diced
1/4 cup fresh cilantro, minced
4 garlic cloves, minced
4 scallions, sliced
2 teaspoons ground cumin
2 teaspoons Mexican oregano
1 teaspoon ground coriander
1/2 teaspoon kosher salt
1 teaspoon black pepper
2 tablespoons fresh lime juice
6 cups masa harina
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1 cup lard, room temperature
3 -4 cups low sodium chicken broth

Steps:

  • Fill a large bowl or pot with warm water. Put the corn husks in the water and weight them down so they stay immersed.
  • Combine all filling ingredients. Set aside.
  • Combine masa, baking powder, and salt.
  • In a standing mixer, beat the lard until it becomes light and fluffy.
  • Gradually mix in dry ingredients.
  • Slowly add chicken broth just until a soft dough forms.
  • To assemble the tamales, put a spoonful of dough on the smooth side of a corn husk, smooth it down to a thin layer (1/8"-1/4" thick), and put a smaller spoonful of filling on the dough. Bring the two sides of the husk together so that the dough rolls around the filling and the husk overlaps itself. Fold up the bottom and tie it with a bit of string or a strand of corn husk.
  • Set the tamales open end up in a steamer or colander. Put the steamer in a large pot with some water in the bottom. The water musn't touch the tamales. Cover tightly and steam over medium heat for 90-120 minutes.
  • Once cooked, tamales can be kept in the freezer. To reheat, put in a microwave-safe bowl, cover, and cook on high for about one minute per tamale.

Tomatillo-Avocado Salsa
12 tomatillo, husked, rinsed well
1 small onion, quartered
6 large garlic cloves, peeled
2 to 3 serrano chilies, stemmed
2 ripe avocados, peeled, diced
1/2 cup chopped fresh cilantro
2 tablespoons fresh lime juice
Tamales
1 6-ounce package dried corn husks
1 pound large poblano chilies
2 cups Masa Harina (corn tortilla mix)
6 tablespoons (3/4 stick) unsalted butter, room temperature
3 tablespoons sugar
2 1/4 teaspoons salt
1/2 cup canned low-salt chicken broth
5 cups frozen baby white corn kernels (about 25 ounces), thawed
3 cups (packed) coarsely grated sharp cheddar cheese
1 teaspoon baking powder
1/8 teaspoon ground black pepper

Steps:

  • Make Salsa:
  • Cook first 4 ingredients in heavy large skillet over high heat until charred in spots but still firm, turning occasionally, about 5 minutes. Transfer to processor; using on/off turns, chop coarsely. Add all remaining ingredients. Blend to coarse puree. Season with salt and pepper. (Can be made 1 day ahead. Cover; chill.)
  • Make Tamales:
  • Selecting the largest and cleanest husks, place half of husks in large bowl; fill bowl with warm water. Weigh husks down with plate; soak husks until soft, separating occasionally, about 2 hours. Form 36 ties by tearing several husks into 1/2-inch-wide strips.
  • Char chilies directly over gas flame or under broiler until blackened on all sides. Place in medium bowl; cover tightly with plastic. Let stand 10 minutes. Peel, seed, and chop chilies.
  • To make dough, blend Masa Harina, butter, sugar, and 1 teaspoon salt in processor until coarse meal forms. Add broth and blend in (mixture will be crumbly). Transfer masa mixture to large bowl. Blend 2 1/2 cups corn, 1 cup cheese, baking powder, pepper, and 1 1/4 teaspoons salt in processor until coarse puree forms. Stir puree, then 2 1/2 cups corn into masa.
  • For each tamale, open 1 large softened husk. Place 1/3 cup tamale dough in center of husk. Make depression in center of dough; fill with 1 tablespoon chilies, then 1 tablespoon cheese. Using moistened fingertips, press dough over filling to cover; shape filled dough into 3-inch-long log parallel to 1 long edge of husk. Fold 1 long side of husk over filling and roll up to enclose. Tie ends of filled husks tightly with husk strips.
  • Add enough water to large pot containing steamer insert to reach bottom of insert. Layer tamales in steamer insert. Bring water to boil; cover pot. Steam until tamales are firm, removing insert and adding boiling water to pot to maintain water level as needed, about 1 hour. (Can be made 1 day ahead. Cool slightly. Refrigerate. Before serving, re-steam 45 minutes to heat through.) Serve tamales in husks with salsa.

3 1/2 cups masa harina flour
2 1/4 cups hot water
10 oz (1 1/3 cups) pork lard or vegetable shortening, slightly softened
2 teaspoons salt
1 1/2 teaspoons baking powder
1 to 1 1/2 cups Progresso™ chicken broth (from 32-oz carton)
2 poblano chiles
2 Anaheim chiles
1 cup shredded cooked chicken
24 oz shredded Monterey Jack cheese (6 cups)
1 package (6 oz) dried corn husks

Steps:

  • In small bowl, combine masa harina flour and hot water.
  • In large bowl, beat lard, salt and baking powder with electric mixer on medium-high speed 1 minute. In 3 additions, beat in flour mixture. Reduce speed to medium-low; beat in 1 cup of the broth. Beat in additional broth until a soft, but not runny batter forms. Refrigerate 1 hour.
  • Meanwhile, place corn husks in large container; cover with warm water. Soak 30 minutes or until soft and pliable.
  • While corn husks are soaking, roast chiles under broiler, turning occasionally, until all sides are charred. Place charred chiles in resealable plastic bag or bowl covered with plastic wrap; let stand 15 minutes.
  • Peel skins from roasted chiles; remove all seeds. Rinse chiles under cool water. Coarsely chop; place in another large bowl. Add chicken and cheese; mix well.
  • If desired, tear 20 (1/8-inch-wide) strips of corn husk to be used to wrap and tie each tamale before steaming.
  • To make each tamale, place 1 or 2 corn husks flat on work surface. (You may need 2 if they are narrow. If using 2, overlap them slightly.) Using butter knife, spread about 3 tablespoons batter to cover about 2/3 of corn husk. Spoon 1 to 2 tablespoons filling onto center. Fold 2 edges in half lengthwise; crimp edge and tuck edges under themselves to seal. Fold bottom end up about 1 inch.
  • Working in batches, use large steamer or collapsible vegetable steamer set in large deep saucepan of boiling water. Place tamales, open end facing up, in steamer. Cover; steam 1 hour and 30 minutes to 2 hours or until tamales can easily be peeled away from corn husks.

Fresh Corn Tamales with Cheese image

you can make these with anything filling you like I prefer cheese and green chilies but you can fill them with your favorite. =)

2 cups fresh corn, right off the cob
3½ cups masa harina
2 tablespoons chile ancho powder
1 tablespoon garlic powder
1½ teaspoons salt
2 teaspoons baking powder
3 cups warm chicken broth
¾ cup vegetable shortening or pork manteca (lard), melted
FILLING
6 large green chilies roasted and peeled
8 ounces of your favorite cheese i use cheddar
YOU WILL ALSO NEED
40 to 45 corn husk for tamales, better to have too many then not enough foil paper or deli paper sheets

Steps:

  • 1. Place a clean kitchen towel on the counter. Using a sharp knife, remove the kernels from ear of corn. Transfer the corn to the food processor and process until coarsely chopped. If you like it a little smoother, you can process a little longer, set aside.
  • 2. Combine masa harina, chile ancho powder, garlic powder, baking powder and salt in large bowl. Gradually add warm chicken broth and using your hand, work into a soft dough.
  • 3. In another glass bowl, melt the shortening or manteca in the microwave for a minute or so. Add the shortening and the reserved corn to the masa and work with hands until mixed well. If masa seems too thick add a little more chicken broth. Cover with plastic wrap and refrigerate for 1 hour.
  • 4. While the masa chills, add the corn husk to a large pot or storage container. Cover completely with really hot water. Use a heavy bowl to weigh down the husk to make sure they stay immersed in the water. Let them soak for a good hour, rotating them halfway through soaking time.
  • 5. Slice the cheese (both kinds) into 2 inch x 1/4 inch strips, set aside. Remove the stems and seeds from the jalapeños and slice each pepper into 8 equal strips, set aside.
  • 6. When ready, take a few of the husks at a time, shake off excess water, if they are more than 4 inches wide, just tear off the side a little. Place the corn husk, smooth side up, in the palm of your hand with the wide side closest to you. With a spoon, spread about 3 to 4 tablespoons of masa all over the bottom half of husk. Add a strip of each kind of cheese and 1 strip of jalapeño lengthwise down the center of the tamale. Fold one side in first, then the other side (it should overlap a little on the first fold). Fold down the empty top section down and lay tamale seam side down until ready to cook. Repeat until all done.
  • 7. Prepare large pot to steam tamales, take a metal steamer that expands out, place it in pot. Fill bottom of pot with about 5 cups of water. Arrange all of your tamales standing up (open side up) around the metal steamer. Insert a smaller, heat-proof bowl in the center of pot to keep the tamales upright. Cover with foil paper, add lid, turn heat to high to get a quick boil going. Reduce heat and steam tamales for one hour. Set the timer for 30 minutes at which time you will add another 2 cups of hot water to the pot. Remove from heat and let them sit, covered, until ready to serve. As they cool, they will become more firm. Yields up to 10 servings, 4 tamales per person. Serve with your favorite salsas and toppings for garnish.
  • 8. Notes & Tips: To check if tamales are done, after steaming for an hour pull one tamale out and let it cool. If the corn husk pulls away easily from the masa, your tamales are done. Whenever I prepare tamales filled with cheese, I like to wrap them in deli paper or foil paper individually as I fill them. This will prevent the cheese from running into the pot. It's optional, but it works well for me.

2 teaspoons ground cumin
2 teaspoons ground black pepper
Grit Cakes, recipe follows
Corn Salsa, recipe follows
Sour cream, for serving
Chopped green onions, for serving
Fresh cilantro leaves, for serving
3 pounds boneless country-style pork spareribs
Coarse salt and freshly ground black pepper

2 tablespoons vegetable oil
8 cloves garlic, crushed
3 carrots, peeled and cut into large chunks
1 large yellow onion, quartered
One 6-ounce can tomato paste
Nonstick cooking spray, for spraying the parchment
4 cups vegetable broth
1 cup grits
1 teaspoon salt
1 cup crumbled queso fresco
2 tablespoons vegetable oil

Steps:

  • In a large skillet over medium heat, add the oil and heat to a shimmer. Add Trisha's Pulled Pork, the chili powder, garlic powder, salt, cumin and black pepper; stir to combine. Add enough reserved cooking liquid to coat the meat but not saturate it. Cook until the meat starts to brown and the spices become fragrant, 8 to 10 minutes. Remove from the heat and hold.
  • Place a Grit Cake on each serving plate and top with some pork, Corn Salsa, sour cream, chopped green onions and cilantro.
  • Season the ribs well on all sides with salt and pepper.
  • In a large Dutch oven over high heat, heat the oil to a shimmer. Add the ribs and sear until browned on all sides, about 8 minutes. Remove the ribs and transfer to a plate. Add the garlic, carrots and onion and cook until golden and caramelized, about 10 minutes. Add the tomato paste and cook for 2 minutes. Add 1 cup of water and, using a wooden spoon, scrape up any browned bits from the bottom of the pan. Add 2 more cups of water and stir to combine.
  • Return the ribs to the Dutch oven, cover and reduce the heat to low. Cook until fork-tender, about 3 hours.
  • Remove the ribs from the liquid and transfer to a baking sheet to cool. Strain the cooking liquid and reserve. When cool enough to handle, use 2 forks to shred the pork.
  • Line an 8-by-10-inch baking pan with parchment paper, leaving any excess hanging off the sides, and spray with cooking spray.
  • In a medium saucepan over medium-high heat, combine the vegetable broth, grits and salt. Bring to a boil and cook until the grits are thickened and soft, 3 to 5 minutes. Fold in the cheese. Pour the grits into the prepared pan and chill for 30 minutes to 1 hour.
  • Using a round cutter or a knife, cut the grits into 2 1/2-inch cakes.
  • In a large skillet, heat the oil to a shimmer and add the cakes. Fry until golden brown, 2 to 3 minutes, then flip and continue cooking until golden brown on the other side, 2 to 3 minutes more. Remove from the skillet and drain on paper towels.
  • In a medium skillet over high heat, heat the oil until it shimmers. Add the corn and cook until beginning to caramelize, about 4 minutes. Add the salsa and enough broth, starting with a 1/4 cup, to make it thick yet pourable. Serve warm.

1/3 c vegetarian butter flavored spread
1 1/2-2 c vegetable broth or stock
1 c coarsley chopped fresh spinach
3/4 c 1/4 inch cubes pepper jack cheese
1/2 c chopped roasted red peppers
2 green onions, halved horizontally and sliced

Steps:

  • 1. Place corn husks in hot water and let stand for 15 minutes to soften; remove and blot off excess water
  • 2. Stir together masa, baking powder and salt in a large bowl. Add spread and mix again. Using an electric mixer beat in enough stock/broth to form a soft dough. Stir in remaining ingredients

1/2 pound frozen banana leaves, thawed, rinsed and patted dry
5 poblano chilies
12 ounces mild white cheese (such as Chihuahua or Monterey Jack), cut into 3-inch sticks about 1/2 inch wide and thick
1 tablespoon butter
2 cups fresh corn kernels
3 cups Maseca instant corn masa flour
1 tablespoon salt
3/4 cups lard, melted
3 cups warm water, plus more as needed
1 cup Mexican crema, or sour cream thinned with a little milk

Steps:

  • Turn on broiler. Cut away stems and thick edges of banana leaves, then cut into 16 (8-by-10-inch) rectangles. Reserve remaining banana leaves. Roast peppers: Place chilies under broiler and roast, turning occasionally, until skin is blackened, about 5-8 minutes. Transfer chilies to a paper bag and close bag to allow chilies to steam. When chilies are cool enough to handle, remove stems, peel away skin and remove core, seeds and ribs. Cut peppers into 1/2 -inch-wide strips. Set aside. Sauté corn: Melt butter in a skillet over medium heat. Add corn kernels and sauté until tender, 3-5 minutes. Set aside. Make masa dough: In a mixing bowl, combine masa flour and salt. Add melted lard and 3 cups warm water. Knead with your hands until a smooth dough forms. Add more water as needed. Dough should reach consistency of mashed potatoes. Assemble tamales: Using tongs, hold one banana leaf rectangle directly over a stove burner set to high until the leaf turns bright green, about 10 seconds per side. (Don't heat leaf longer or it will become brittle.) Place leaf, smooth side up, on work surface. Place a generous 1/3 cup dough in center of each leaf and flatten to a thickness of 1/4 inch. Place 2 sticks of cheese in center of dough, then add 2 chili strips and 2 tablespoons corn. Repeat with remaining banana leaves. Fold tamales: Fold long sides of leaf to enclose filling in dough. (Sides of leaf will overlap to make a snug package.) Then fold ends over on seam side and rest tamale on top of folded ends so that its weight holds the package together. Cook tamales: Set a steamer basket in a large, lidded pot and fill bottom of pot with just enough water to come nearly to bottom of steamer without touching it. Line bottom of basket with leftover banana leaves. Arrange tamales in basket in layers, then cover with remaining banana leaves. Cover pot, bring water to a boil, then reduce heat and simmer 50 minutes. Remove from heat and let tamales rest 5 minutes. To serve, set tamale packets on plates, unwrap and drizzle with crema. 2 large poblano peppers
1 recipe Tamale Dough
8 ounces Monterey Jack cheese, shredded
Salsa Verde, to serve

Steps:

  • Place 12 husks in a large bowl, cover with hot water, and weigh down with a plate to keep husks submerged. Soak until soft and pliable, about 2 hours; drain. Peel remaining husks into thin strips to yield 24.
  • Place poblanos directly over open flame and char, turning with tongs, until blackened on all sides, about 5 minutes. Transfer to a large bowl, cover with plastic wrap, and steam 10 minutes. Using a paper towel, peel skin from peppers. Remove stems and seeds and coarsely chop.
  • Place a corn husk in your flattened palm. Pinch 1/4 cup dough with other hand and press into center of husk to make a 4-by-3-inch rectangle.
  • Press 1/4 cup cheese and 2 tablespoons chopped poblanos into center of dough. Close palm to seal edges of dough and place on a clean work surface with a long side of husk facing you. Roll husk away from you to form a tight log. Fold stem end of husk over and tie with a strip of corn husk. Twist thin end of tamale and tie with another strip of corn husk. Repeat this process to form remaining tamales.
  • Insert a steamer basket inside a large pot with 1/2 inch boiling water. Place tamales in basket, cover pot, and steam tamales for 1 hour, checking pot occasionally and adding hot water as needed to prevent scorching the bottom of the pot.
  • Serve tamales with salsa verde.

QUICK CHICKEN AND CHEESE TAMALES

These are so easy to make. I love tamales but didn't want the hassle of making them, but this is a great recipe. I like green chili cheese tamales and am going to make them next time as this time I had a leftover rotisserie chicken to use.

2 c masa harina
1 tsp baking powder
1 1/4 tsp kosher salt
1/2 c solid vegetable shortening
1/2 c low-sodium chicken broth
2 1/2 c shredded chicken (leftover rotisserie)
1/4 lb sharp cheddar cheese, shredded
1/2 c chopped cilantro
2 scallions, finely chopped
hot sauce, for serving
1 1/2 c water

Steps:

  • 1. In a food processor, pulse the masa harina with the baking powder and salt. Add the 1 1/2 cups of water and pulse to moisten the masa harina.
  • 2. Add the vegetable shortening in clumps and drizzle with the chicken stock. Process until smooth and evenly blended, scraping the side of the bowl occasionally. Transfer the dough to a large bowl and stir in the shredded chicken, shredded cheese, chopped cilantro and the scallions.
  • 3. Tear twelve 12" square sheets of plastic wrap. Working with 6 at a time, spoon a scant 1/2 cup of the tamale mixture onto the center of each sheet. With lightly moistened hands, press the tamales into 4-by-2-inch rectangles, about 1/2" thick. Fold up the squares of plastic around the tamales, twist the ends securely and then fold the edges under to make packets. Repeat to form the remaining tamales.
  • 4. Arrange the tamales seam side down tn the bottom of a large bamboo or other steamer. Steam over 2" of boiling water for 25 minutes. Let the tamales cool slightly, then carefully transfer them to a large platter. Cut the ends of the plastic-wrapped packets and slide the tamales out onto the platter. Serve with the hot sauce.

Fold down the empty top section down and lay tamale seam side down until ready to cook. Repeat until all done. Prepare large pot to steam tamales, take a metal steamer that expands out, place it in pot. Fill bottom of pot with about 5 cups of water. Arrange all of your tamales standing up (open side up) around the metal steamer. Insert a smaller, heat-proof bowl in the center of pot to keep the tamales upright. Cover with foil paper, add lid, turn heat to high to get a quick boil going. Reduce heat and steam tamales for 1 hour.
