I found this recipe online (www.allfreecrafts.com) & used it for Christmas 2006. I made a test batch before gift-giving, and this is my tweaked version of the original recipe- my version includes more cheese and is less thick. Note: I found the cheese powder at the local bulk foods store.

2 cups powdered coffee creamer
3/4 cup powdered cheese sauce mix
1 tablespoon dried parsley flakes
1 tablespoon chicken bouillon granule
1 tablespoon dried onion flakes
2 cups instant potato flakes (approximate amount)
1 cup diced cooked ham
1 (10 ounce) box cooked chopped broccoli
crouton
shredded cheese

Steps:

  • Layer ingredients in a 1 quart canning jar in the order given. Use enough potato flakes to fill the jar- may not need the full amount (I didn't).
  • For gift-giving, attach a card that reads: Bring 6 cups of water to a boil in a large pan. Add contents of jar, stir well, remove from heat, and let sit five minutes. Optional: May stir in one cup diced, cooked ham or broccoli.
  • NOTE: I found that this soup got very thick as it cooled, so I've cut down on the original amount of potato flakes and increased the water. If you find that it's too thick, add another cup of boiling water.

⅓ cup beef bouillon granules
¼ cup dried minced onion
½ cup dried split peas
½ cup uncooked twist macaroni
¼ cup barley
½ cup dry lentils
⅓ cup long-grain white rice
1 cup uncooked tri-color spiral pasta

Steps:

  • Use a canning funnel or any funnel that has about a 2-inch neck. This will make it easier to fill the jar with the ingredients. Be sure to use a wide-mouth, 1-quart canning jar.
  • Layer ingredients in the order given: bouillon, onion flakes, split peas, small shape pasta, barley, lentils, rice, and enough tricolor spiral pasta to fill jar.
  • Attach tag with cooking instructions: In large kettle, brown 1 pound ground beef or stew beef cut into bite-size pieces in a little olive oil. Remove tricolor pasta from top of jar and reserve. Add the rest of the jar contents to the kettle with 12 cups water. Let come to a boil and simmer 45 minutes. Add tricolor pasta and simmer 15 minutes more. Serve with your favorite bread or rolls and a tossed salad.

¼ cup butter
1 onion, chopped
¼ cup all-purpose flour
3 cups chicken broth
3 cups milk
1 pound shredded Cheddar cheese

Steps:

  • In a 3 quart saucepan over medium-high heat, melt butter or margarine. Add onion and cook until tender, about 5 minutes. Stir in flour and cook until flour has blended with onion mixture.
  • Add chicken broth and cook, stirring constantly, until mixture is slightly thickened. Add milk and heat just to boiling, stirring constantly.
  • In covered blender at medium speed, blend about 1/4 of soup mixture at a time until smooth. Return to saucepan and, over medium heat, heat just to boiling. Remove from heat.
  • With wire whisk or slotted spoon, stir in cheese until melted. If cheese does not melt completely, cook over very low heat about 1 minute, stirring constantly.

5 tablespoons butter
1 cup finely chopped yellow onion
1 cup finely chopped celery
1 cup peeled, chopped parsnip
2 tablespoons minced garlic
½ cup all-purpose flour
4 cups chicken stock
2 cups amber beer
2 bay leaves
⅛ teaspoon cayenne pepper
½ cup heavy whipping cream
2 cups shredded Cheddar cheese

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble.
  • Melt butter in large saucepan over low heat. Stir in onions, celery, and parsnips. Cover and cook, stirring occasionally, until vegetables are very tender, about 10 minutes. Add garlic; cook and stir until fragrant, 1 minute. Sprinkle flour over the mixture and stir constantly until flour dissolves, 3 or 4 minutes.
  • Slowly stir chicken stock and ale into onion mixture. Add bay leaves and cayenne pepper. Increase heat to medium or medium-high to slowly bring mixture to a boil. Reduce heat to medium-low when mixture starts to bubble; simmer uncovered until soup reaches a smooth consistency, about 1 hour.
  • Stir heavy cream into soup; add Cheddar cheese. Continue cooking over medium-low heat, stirring occasionally, until cheese has melted and soup is heated through, 3 or 4 minutes. Do not bring to a boil. Sprinkle bacon crumbles on soup.
