POTATO PACKETS
This is a recipe that I have had for years. I originally got it off of a Lipton Soup Mix box and changed a bit. I like red potatoes the best but any can be used. I also add chopped carrots if I have them on hand. Originally designed for grill, I have cooked them in the oven in packets on a cookie sheet.

Tips:
- Choose the right type of potatoes: Waxy potatoes, such as Yukon Gold or Red Bliss, hold their shape well and won't become too mushy when cooked in the foil packet.
- Use a variety of cheeses: A combination of cheeses, such as cheddar, mozzarella, and Parmesan, will give your dish a rich and flavorful taste.
- Add some herbs and spices: To enhance the flavor of your dish, add some fresh or dried herbs, such as thyme, rosemary, or oregano. You can also add some garlic powder, onion powder, or paprika.
- Don't overcrowd the foil packet: Make sure to leave some space in the foil packet so that the potatoes and cheese can cook evenly.
- Seal the foil packet tightly: To prevent the steam from escaping, seal the foil packet tightly around the potatoes and cheese.
- Cook the foil packet over medium heat: Cooking the foil packet over medium heat will help to prevent the potatoes and cheese from burning.
- Let the foil packet rest before opening: Once the cooking time is complete, let the foil packet rest for a few minutes before opening. This will allow the steam to redistribute and the cheese to melt evenly.
Conclusion:
Cheese potato packets are a delicious and easy-to-make dish that can be enjoyed by people of all ages. They're perfect for a weeknight meal, a potluck, or a camping trip. With a few simple tips, you can make sure your cheese potato packets turn out perfectly every time. So next time you're looking for a quick and easy meal, give cheese potato packets a try!
