When I was a kid growing up in Texas, my best friend's mom used to make these every Christmas. Thank you Schotzie! Wouldn't you know it - I married a guy who hates olives. These tasty little treats can be frozen in single layer. When frozen, store in plastic zipper bag. If frozen, bake at 400ºF for 18-20 minutes.

Yield 24 appetizers, 6-8 serving(s)
Number Of Ingredients 6
Steps:
- Preheat oven to 400 degrees.
- Make dough by mixing cheese, butter, flour, salt and paprika.
- Pinch off dough and wrap around each olive, making little balls.
- Place on an ungreased cookie sheet.
- Bake for 10- 15 minutes.
- Serve warm.
- May be made ahead and frozen until ready for baking.
Tips:
- Use a good quality cheese that melts well, such as mozzarella, cheddar, or Parmesan. Grated cheese is easier to mix into the dough than sliced or cubed cheese.
- Add some chopped olives to the dough for a salty, briny flavor. You can use any type of olives you like, such as black olives, green olives, or Kalamata olives.
- Feel free to add other ingredients to the dough, such as cooked bacon, diced ham, or chopped vegetables. Get creative and make it your own!
- If the dough is too sticky to handle, add a little more flour. If the dough is too dry, add a little more milk or water.
- Roll the dough out to a thickness of about 1/4 inch. If the dough is too thick, the puffs will be dense and heavy. If the dough is too thin, the puffs will be crispy and brittle.
- Bake the puffs in a preheated oven at 375 degrees Fahrenheit for about 15 minutes, or until they are golden brown and cooked through.
- Serve the puffs warm or at room temperature. They can be eaten alone or with a dipping sauce of your choice.
Conclusion:
Cheese olive puffs are a delicious and easy-to-make appetizer or snack. They are perfect for parties, potlucks, or simply enjoying at home. With a few simple ingredients and a little bit of time, you can create these tasty treats that are sure to please everyone.
