3 cups bread flour, plus more for work surface
1 teaspoon fine sea salt
3/4 teaspoon instant or active-dry yeast
1 3/4 cups 1/2-inch cubes aged Gruyere cheese
1 1/2 cups pitted 1/4-inch-thick slices green Spanish olives
1 1/2 cups cool water (55 to 65 degrees), plus more as needed

Steps:

  • In a medium bowl, stir together flour, salt, and yeast; stir in cheese and olives. Add water and, using a wooden spoon or your hand, mix until a wet, sticky dough forms, about 30 seconds, adding additional water, 1 tablespoon at a time, if needed. Cover bowl with plastic wrap and let stand at room temperature until dough has doubled in size and surface becomes dotted with bubbles, 12 to 18 hours.
  • Generously flour work surface; scrape dough onto work surface. Lightly flour hands, a bowl scraper, or a spatula and lift edges of dough toward the center. Nudge and tuck edges of dough to make round.
  • Place a piece of parchment paper on work surface and generously dust with flour. Gently place dough on parchment, seam-side down. If dough is tacky, lightly dust top with flour. Cover dough loosely with wax paper and two clean kitchen towels. Let dough stand in a warm, draft-free spot until almost doubled in size, 1 to 2 hours.
  • Gently poke dough with your finger; dough should hold the impression. If it springs back, let rise 15 minutes more.
  • Ten minutes before dough has finished rising, preheat oven to 475 degrees on a conventional oven (450 degrees on a convection oven) with a rack in the lower third. Place a covered 3 1/2-quart cast-iron or enameled cast-iron Dutch oven (with plastic handle removed and screw hole plugged with aluminum foil) in center of rack.
  • Using pot holders, carefully remove preheated Dutch oven from oven and uncover. Uncover bread and loosen bottom with a large spatula. With the aid of the parchment paper, invert bread into preheated Dutch oven so that it is seam-side up. Cover Dutch oven and transfer to oven; bake for 25 minutes.
  • Uncover and continue baking until bread is dark brown but not burnt, 15 to 30 minutes more. Using a heatproof spatula or pot holders, gently lift bread from Dutch oven and transfer to a wire rack to cool.

3/4 cup sour cream
3 tablespoons butter, melted
1 egg, lightly beaten
1 -2 teaspoon granulated garlic (optional)

Steps:

  • Heat oven to 350 degrees. Grease a 9×5 loaf pan with oil. In a bowl, whisk together the first 5 ingredients. (And optional garlic granules) Carefully stir in cheese cubes until covered in flour mixture, this will help prevent your cheese sinking to the bottom of your loaf of bread.
  • In a different bowl, whisk together the remaining ingredients. Fold the wet mixture into the flour and cheese mixture, stir until just combined, do not over stir. Spread the mixture into the loaf pan. Bake for 45-50 minutes. Let cool 10 minutes and then remove from pan. Allow to cool for one hour before slicing and serving.

This was a forgotten recipe in Private Recipes folder. I vaguely remember working on it a year or so ago! I tried it out again this morning, and it's very good if I do say so myself. I use Splenda and low fat ingredients and am posting it that way for the nutritional info, but feel free to use regular ingredients if you desire. This makes two loaves so you can eat one and give one away or freeze for later use. When I made it this morning, I made a loaf and 10 muffins. Because I was using it as a breakfast bread I left out the brown sugar to make it less sweet. For a sweeter, snack type bread, make as written. Hope you enjoy!

Steps:

  • In a small bowl, beat cream cheese and butter. Add cheese, onions and garlic salt; mix well. Cut bread, leaving slices attached at the bottom; spread slices with cream cheese mixture. , Wrap loaf in a large piece of heavy-duty foil (about 28x18 in.); seal tightly. Grill, covered, over medium heat for 8-10 minutes, turning once. Carefully open foil; grill bread 5 minutes longer.

I saw this recipe on a TV show on Amish cooking in the 1980s, and I've adapted it to suit our tastes. The Swiss cheese and bacon make it very satisfying on cold fall and winter evenings.

1 bacon strip, cut into thirds
1 egg, lightly beaten
1/3 cup crushed butter-flavored crackers (about 8 crackers)
5 tablespoons shredded Swiss cheese, divided
4-1/2 teaspoons chopped onion
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon rubbed sage
1/8 teaspoon pepper
1/2 pound lean ground beef

Steps:

  • In a skillet, cook bacon over medium heat for 2 minutes on each side or until cooked but not crisp. Drain on a paper towel; set aside. , In a bowl, combine the egg, crackers, 4 tablespoons cheese, onion, garlic, salt, sage and pepper. Crumble beef over mixture and mix well. Shape into a loaf and place in a greased 5-3/4x3x2-in. loaf pan. Place bacon pieces over top. Bake, uncovered, at 350° for 30 minutes. Sprinkle with remaining cheese; bake 2-4 minutes longer or until a thermometer reads 160° and cheese is melted.

Two cans of tuna and cream cheese and bread cubes and you have the start of a wonderful main dish. You can serve this with cream sauce or plain with any type of red sauce. It is delicious to serve as a slice in a sandwich.

1 (8 ounce) package fat-free cream cheese
3 eggs
1/2 teaspoon dried dill weed
1/2 teaspoon salt
1/2 teaspoon pepper
5 cups stuffing cubes or 5 cups dried seasoned bread cubes
1 cup skim milk
2 (12 ounce) cans whie albacore tuna in water, drained
2 tablespoons vegetable oil
paprika
Pam cooking spray

Steps:

  • Beat with mixer in a large bowl, cream cheese, eggs, dried dill weed, salt and pepper.
  • In another bowl, add two cubes dried bread cubes and 1 cup milk. Stir around. Set aside.
  • Add tuna. Break tuna apart with a fork while adding. Mix.
  • Add balance of seasoned bread cubes and the soaked break cubes.
  • Stir with spatula until mixed.
  • Add vegetable oil and mix.
  • Preheat oven 350*.
  • Spray Pam in a large loaf pan.
  • Pour loaf ingredients and smooth out.
  • Sprinkle paprika on the top.
  • Bake 1 hour or until top springs back to the touch.
  • Let cool at least 10-15 minutes.
  • Note: I used my spiced croutons which have chili powder and cumin. and butter. You might like to use thyme or sage along with the dill weed.
  • This keeps well.
  • You may serve with tartar sauce, cream gravy, ketchup, chili sauce or mayo or miracle whip on a sandwich.

4 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups grated cheese (, your choice, we like sharp cheddar)
1 1/2 cups milk

  • Combine flour, baking powder, salt and cheese in large bowl.
  • Stir thoroughly.
  • Add milk and melted butter.
  • Stir to form soft dough.
  • Put in greased loaf pan 9 x 5 x 3 inch.

  • Remove from pan to cool.

1 pound ground turkey
1 egg
¼ cup chopped fresh parsley
¾ cup dry bread crumbs
½ teaspoon adobo seasoning
1 pinch salt
1 pinch pepper
¾ cup shredded Cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a loaf pan with nonstick cooking spray.
  • Combine ground turkey, egg, parsley, bread crumbs, adobo, and salt and pepper in a large bowl. Mix well. Press half of the turkey mixture into the bottom of the prepared loaf pan. Sprinkle 1/2 cup cheese in a mound down the center of the pan; top with the remaining meat to form a loaf.
  • Bake in the preheated oven until browned and cooked through, about 1 hour. Sprinkle the remaining 1/4 cup cheese on top during the last 5 minutes of baking. Allow cooked meatloaf to rest for at least 5 minutes before slicing.

BAKED MACARONI & CHEESE LOAF

I have texture issues - so this macaroni and cheese is my favorite due to the low "slime" factor! It's more like macaroni and cheese souffle since it has eggs. I adapted this from a church cookbook recipe my mom used to have - but it was very labor intensive. This way works fine for me! I like it because it's quick to throw together and put in the oven. I usually throw in a green bean casserole with it. If you want to try a new version of an old classic - give this a try!

1 cup uncooked elbow macaroni
1 cup breadcrumbs
1 cup shredded cheese
1 cup milk
1/4 cup butter or 1/4 cup margarine, melted
3 eggs
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees. In a bowl, whisk the 3 eggs. Add the remaining ingredients to combine. Poor into a greased pan (I use either a bread pan or a 9x13 pan.) Cover with foil and bake for 45 minutes. Take off the foil and bake for another 15 minutes. Remove and let it rest for about 5 minutes. Cut and serve.
  • You can also use seasoned bread crumbs and add onions or onion powder, garlic powder and/or ham. Sometimes I put the macaroni and a bowl with water and microwave for about 5 minutes - just to soften them a bit more. Yum! My husband swears this tastes better the next day - so he's happy to have leftovers -- .

Tips:

  • Use a sharp cheddar cheese for the best flavor. Freshly grated cheese will melt more smoothly than pre-shredded cheese.
  • Don't overmix the batter. Overmixing can make the cheese loaf tough.
  • Bake the cheese loaf in a loaf pan until a toothpick inserted into the center comes out clean. This usually takes about 45-50 minutes.
