This is my favorite recipe, learned from my mother. People love it and ask me for the recipe every time they try it, so here it is. I find it tastes better cold.

1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
6 eggs
1 (8 ounce) package cream cheese, softened
⅓ cup 2% milk
1 teaspoon vanilla extract
1 cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Fill a large oven-safe pot with water to 1 inch; bring to a boil.
  • Place sweetened condensed milk, evaporated milk, eggs, cream cheese, milk, and vanilla extract in a blender; blend until smooth.
  • Place sugar in an even layer in a saucepan over medium heat. Cook until edges start to brown, about 1 minute; drag sugar into the center with a spatula once the edges start to brown. Continue cooking, stirring from time to time, until caramel is an even golden brown, 4 to 5 minutes.
  • Pour caramel into a 9-inch flan mold or baking pan; swirl so that caramel reaches 1 inch up the sides. Pour condensed milk mixture on top. Place mold in the pot of boiling water.
  • Bake flan in the preheated oven until a damp table knife inserted into the center comes out clean, 45 minutes to 1 hour. Remove from oven and let stand for 5 minutes.
  • Chill flan in the refrigerator until firm, 2 to 3 hours. Invert onto a serving plate so that caramel is on top.

  • Preheat oven to 350°F and heat sugar in a small, heavy-duty saucepan over medium-low heat.
  • Stirring constantly, for 3 to 4 minutes or until sugar is dissolved and caramel colored.

One 14-ounce can sweetened condensed milk
1 1/2 cups milk
2 teaspoons ground cinnamon
2 teaspoons vanilla

1 cup mixed berries (blueberries, raspberries, blackberries), for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • To make the caramel, add the sugar and 2 tablespoons water to a pan and heat over medium-low heat, stirring to dissolve the sugar. Once the sugar is dissolved, do not stir anymore. Cook until the mixture turns amber brown, about 10 minutes. Brush down the sides of the pan as needed with a wet pastry brush to avoid crystallization. When the caramel is done, pour evenly into six 3/4- to 1-cup ramekins.
  • Add the cream cheese to the bowl of a stand mixer and whip until smooth. Add the condensed milk, regular milk, cinnamon, vanilla, salt and eggs and beat until smooth and the ingredients are incorporated. Divide evenly among the ramekins over the caramel.
  • Bring some water to a boil in a kettle. Place the ramekins in a large roasting pan and pour boiling water into the pan until it reaches about halfway up the ramekins. Bake until the custard is set, about 45 minutes. Allow to cool completely, then refrigerate until chilled.
  • To remove the flans from the ramekins, run a knife around the edge of each flan and invert onto individual serving plates. Garnish with the mixed berries.

For sauce
1/4 lb Italian Fontina, rind discarded and cheese coarsely grated (or cut into 1/4-inch dice if too soft to grate)
1/2 cup whole milk
2 large eggs yolks
1 tablespoon butter

Steps:

  • Make flan:
  • Put oven rack in middle position and preheat oven to 325°F. Butter an 8- by 2-inch round cake pan and line bottom with a round of wax paper, then butter paper. 3Steam asparagus in a steamer set over boiling water, covered, until very tender, 6 to 8 minutes. Purée asparagus in a food processor until smooth, 1 to 2 minutes. (You will have about 2 cups purée.)
  • Whisk together eggs, milk, cheese, salt, pepper, and nutmeg in a bowl, then whisk in asparagus purée.
  • Pour asparagus mixture into pan and bake in a hot water bath until flan is set and a wooden pick or skewer inserted in center comes out clean, 50 minutes to 1 hour.
  • Transfer pan to a rack to cool slightly, 10 to 15 minutes.
  • Make sauce while flan cools:
  • Put all sauce ingredients in a metal bowl, then set bowl over a pan of barely simmering water. Heat sauce, whisking until cheese and butter are melted, and then stirring with a wooden spoon, until sauce is slightly thickened and registers 165°F on an instant-read thermometer, 5 to 8 minutes. Remove bowl from pan.
  • Run a thin knife around edge of flan to loosen, then invert a serving plate over pan and invert flan onto plate. Remove pan and discard paper. Cut flan into wedges and serve immediately with sauce.

COCONUT CARAMEL CREAM CHEESE FLAN

1 (14 ounce) can condensed milk

4 large egg yolks

1 (3 1/2 ounce) can sweetened flaked coconut
1 cup sugar
1/4 cup water

Steps:

  • Preheat oven to 350 degrees F.
  • Put water, an inch or so, into a large lasagna or other pan that will accommodate the bundt or angel food cake pan. Put into the oven.
  • In a bowl, combine the milks (evaporated and condensed and cream of coconut), the vanilla and the coconut flakes.
  • In a separate bowl, mix the egg yolks with a fork or whisk. Add to the milk mixture. Add the softened cream cheese and mix (may use an electric mixer).
  • Caramel:.
  • In a saucepan, combine the sugar and water over medium-high heat. Let "melt" until it turns light brown (do not let burn!). Pour the caramel into an angel food or bundt pan.
  • Let the caramel harden.
  • Pour the milk mixture into the cake pan. Put the cake pan into the oven in a preheated lasagna pan.
  • Bake at 350 degrees for an hour and an half. When it is done, let it cool for a full hour.
  • Turn upside down onto a large platter and chill for at least 2-3 hours.
  • Garnish with oranges with leaves and orange slices and mint.

Guava and cheese (Guyaba con Queso) is a typical combination for Cubans. It is delicious! They have Guava Skins that are made in syrup and then combined with cream cheese and "Cuban" crackers - oh my!!! This is an acquired taste and one that is NOT diet friendly!! 8 large eggs
12 oz cream cheese (room temperature)
10 oz sweetened condensed milk
15 oz coco lopez (cream of coconut)
15 oz coconut milk
12 oz evaporated milk
1 Tbsp coconut-flavored rum (malibu or bacardi® coconut™)
2 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350
  • 2. Add the sugar to the metal pan and melt over the stove at low-medium heat moving it with a wooden spoon until golden color. Turn the heat off a little before the desired color as it will continue to darken and it will burn if you are not careful. Very carefully and using oven mitts, swirl pan around while sugar is still soft to cover bottom and sides. It will get thicker as it cools and eventually harden as a lollipop. Set pan aside to cool.
  • 3. Combine the eggs, cream cheese, and sweetened condensed milk in a blender. Cover, and blend on High until well combined; transfer to a large bowl. Pour the cream of coconut, coconut milk, evaporated milk, coconut-flavored rum, and vanilla extract into the blender; cover and blend on High until well combined. Pour into the bowl with the cream cheese mixture. Whisk until incorporated. Pour the flan mixture into the caramel-coated baking dish.
  • 4. Line a roasting pan with a damp kitchen towel. Place the filled baking dish on the towel, and place roasting pan in the preheated oven. Fill roasting pan with boiling water to reach halfway up the sides of the baking dish. Bake until the flan is set and a knife inserted in the center comes out clean, about 1 hour.
  • 5. Transfer to a wire rack; cool. Refrigerate flan until ready to serve.
  • 6. To serve, run a knife around the edges of the pan and invert flan onto a serving plate. Spoon any remaining caramel over the flan.

1 (8 ounce) package Philadelphia Cream Cheese, cut up, softened
5 eggs
1 teaspoon vanilla
1 dash salt
1/4 cup cajeta caramel topping

Steps:

  • PREHEAT oven to 350°F Place 1 cup of the sugar in small heavy saucepan; cook on medium heat until sugar is melted and deep golden brown, stirring constantly with wooden spoon. Remove from heat. Immediately pour into 9-inch round baking pan; tilt pan to evenly cover bottom of pan with syrup. Set aside.
  • PLACE milk and cream cheese in blender; cover. Blend until smooth. Add remaining 1 cup sugar, the eggs, vanilla and salt; cover. Blend just until smooth; add cajeta and pour into prepared baking pan. Place filled baking pan in larger baking pan; add enough hot water to larger pan to come halfway up side of smaller pan.
  • BAKE 50 minute to 1 hour or until knife inserted near center comes out clean. Cool. Carefully remove flan from water. Cool on wire rack.
  • REFRIGERATE several hours or unti chilled. When ready to serve, run a knife around the edge of the pan. Then, invert pan onto serving plate to unmold flan. Store any leftovers in refrigerator. If you have trouble getting the caramel out of the pan, place the bottom of the pan in hot water and then spoon the caramel on the flan.

300 g plain flour
150 g butter, softened
1 -2 tablespoon water
2 tablespoons olive oil
750 g red onions, finely sliced
4 -6 shallots, finely sliced
1 teaspoon sugar
150 g goat cheese, preferably a mild variety
1 egg
3 egg yolks
100 ml double cream
100 ml milk
1 -2 teaspoon salt
1 -2 teaspoon fresh ground black pepper
1 -2 teaspoon oregano, finely chopped (optional)

Steps:

  • Sift the flower and 1/2 tsp of salt into a bowl.
  • Add the butter and with you fingers rub the butter into the flower until absorbed.
  • Add water to form a thick but workable dough.
  • Cover the pastry in cling film and chill in the fridge for about 30 minutes.
  • On a lightly flowered surface roll out the pastry finely and cover a 28 cm flan dish.
  • Prick the base a couple of times with the fork and bake blind in a preheated oven (200 C, 400 F or Gas Mark 6) for about 15-20 minutes.
  • While the pastry is baking heat oil in a frying pan.
  • Fry the onions and shallots on a gentle heat until soft and starting to colour, around 15-20 minutes.
  • Add the sugar and salt to taste and mix well.
  • At this stage you can also mix in herbs if required.
  • Pace the onions into the part-paked pastry case and top with goat's cheese (if you have a hard variety you'll need to cut it into chunks otherwise you can just spoon it on) and black pepper.
  • Beat the egg, yolks, cream and milk together and pour the mixture over the onions and goat's cheese.
  • Bake in a preheated oven (200 C, 400 F or Gas Mark 6) until the filling has set, approximately 25-40 minutes.

I love this for dessert and find that it is always well received. It is like a cross between cheese cake and flan. A nice finish to a Mexican dinner or to celebrate Cinco de Mayo. Recipe from Kraft. Cook time also includes time in the fridge.

2 cups sugar, divided
1 (12 ounce) can evaporated milk
1 (8 ounce) package Philadelphia Cream Cheese, cut up, softened
5 eggs
1 teaspoon vanilla
1 dash salt

Steps:

  • PREHEAT oven to 350°F Place 1 cup of the sugar in small heavy saucepan; cook on medium heat until sugar is melted and deep golden brown, stirring constantly with wooden spoon. Remove from heat. Immediately pour into 9-inch round baking pan; tilt pan to evenly cover bottom of pan with syrup. Set aside.
  • PLACE milk and cream cheese in blender; cover. Blend until smooth. Add remaining 1 cup sugar, the eggs, vanilla and salt; cover. Blend just until smooth; pour into prepared baking pan. Place filled baking pan in larger baking pan; add enough hot water to larger pan to come halfway up side of smaller pan.
  • BAKE 50 minute to 1 hour or until knife inserted near center comes out clean. Cool. Carefully remove flan from water. Cool on wire rack.
  • REFRIGERATE several hours or unti chilled. When ready to serve, run a knife along the edge of the pan. Then, invert pan onto serving plate to unmold flan. If some caramel is stuck to the bottom of the pan, you can place the bottom of the pan in a sink full of hot water to heat it, and then spoon it over flan. Store any leftovers in refrigerator.

1/4 cup water
1 (14-ounce) can sweetened condensed milk
1 (8-ounce) package cream cheese, softened
5 eggs
1 teaspoon vanilla extract
1 (12-ounce) can evaporated milk

Steps:

  • Position rack in center of oven and preheat to 350 degrees F.
  • Arrange 8 (6-ounce) oven-safe custard or dessert cups in a large roasting pan. Stir sugar and water in a small saucepan over low heat until sugar dissolves. Increase heat to high and boil without stirring until liquid is a deep golden brown, brushing down sides of saucepan with a wet pastry brush to prevent sugar from crystallizing, about 12 minutes. Quickly pour syrup into prepared cups.
  • In a blender, combine condensed milk, cream cheese, eggs, and vanilla. Blend until smooth, about 30 seconds. Transfer to an 8-cup measuring cup or large bowl. Whisk in evaporated milk. Divide custard equally among prepared cups. Transfer roasting pan to oven. Pour enough water into roasting pan to come halfway up the sides of the custard cups.
  • Bake until sides are firmly set and only the very center of custards jiggle slightly when cups are gently shaken, about 45 minutes (custards will firm up as they cool). Remove cups from pan, cover tightly with aluminum foil, and refrigerate until cold, at least 4 hours and up to 24 hours. Run small sharp knife around sides of custards. Invert each cup onto a dessert plate, shaking gently to release custard from cups. Drizzle caramel sauce over custard. Serve cold.

1 cup sugar
1/4 cup water
Flan
4 1/2 cups fresh whole milk
1 (14-ounce) can sweetened condensed milk
1/4 cup aged dark rum
6 star anise pods
2 (3-inch) sticks true cinnamon (see above)
1 teaspoon aniseed
1 teaspoon pure vanilla extract, preferably Mexican
1 teaspoon bitter almond extract
2 plump Mexican vanilla beans, split lengthwise, seeds scraped and reserved
Pinch of freshly grated nutmeg
1/8 teaspoon salt
6 ounces dark chocolate, preferably Cluizel Concepción (66% cacao), finely chopped
6 ounces cream cheese, warmed to room temperature
6 large egg yolks
2 whole large eggs
Hibiscus Sauce

Steps:

  • Preheat the oven to 350°F. Set aside an 8 x 4-inch loaf pan (4-cup capacity), 10-inch round cake pan, or twelve 4-ounce ramekins. Have ready a heatproof dish or pan at least 3 inches deep that is large enough to hold the pan or ramekins comfortably.
  • To make the caramel, combine the sugar in a small pan with the water and bring to a boil over medium heat, watching carefully until the mixture thickens to look like a syrup, bubbles quickly, and turns a rich caramel color. Quickly pour the hot caramel into the cake pan (or ramekins) and swirl to coat the bottom(s) and sides evenly before the mixture hardens. Set aside and let cool while you make the flan.
  • To make the flan, combine the whole milk and condensed milk in a saucepan. Add the rum, star anise, cinnamon sticks, aniseed, vanilla and almond extracts, vanilla beans and the seeds, nutmeg, and salt. Bring barely to a boil, reduce the heat to low, and simmer gently for 2 to 3 minutes. Add the chocolate, stirring with a wooden spoon to help it melt and blend. Remove from the heat and let the spiced chocolate mixture cool to room temperature. When the mixture is cool, remove the vanilla bean, cinnamon sticks, and star anise with a fork or slotted spoon.
  • Meanwhile, preheat the oven to 335°F. Set up a hot water bath by having ready a kettle of boiling water and a baking dish large enough to hold the cake pan (or ramekins).
  • With a wooden spoon, beat the cream cheese in a large mixing bowl until softened. Beat in the yolks and whole eggs, one at a time, using a whisk or electric mixer. Slowly add the cooled chocolate mixture, whisking to blend completely. Strain the mixture through a medium-mesh strainer into the caramel-coated cake pan or ramekins. Place the pan or ramekins in the reserved larger baking dish, slide into the oven, and carefully pour in enough hot water to come halfway up the outside of the cake pan or ramekins.
  • Bake the large flan for about 1 hour; bake the ramekins for 30 to 40 minutes. Don't expect the custard to be completely set in the center. Remove from the oven, lift from the water bath, and let cool to room temperature. Refrigerate in the pan for at least 3 hours before turning the flan out onto a platter (or individual dishes). Serve with the Hibiscus Sauce.

  • Preheat oven to 350°F Stir sugar and 1/2 cup water in heavy medium saucepan over medium-low heat until sugar dissolves. Increase heat and boil without stirring until syrup turns deep amber, occasionally brushing down sides of pan with wet pastry brush and swirling pan. Refrigerate uncovered until cool, then cover and refrigerate overnight.
