1 c chopped onion
3 clove garlic minced
1 Tbsp oil
15 oz can chili with beans or without
3 Tbsp brown sugar
1 tsp chili powder
1/2 tsp cumin
1 pkg hot dogs
1 c shredded sharp cheddar

  • 1. Make the cornbread according to directions on box. Spread half in bottom of greased baking pan.
  • 2. In large skillet add the olive oil and saute the onions and garlic until translucent. Cut the hot dogs in half lengthwise then into pieces. Stir hot dogs into the onion mixture and let brown Stir in the chili, brown sugar, chili powder and cumin.
  • 3. Spoon hot dog mixture over cornbread mixture in baking pan. Top with cheese. Top with remaining cornbread mixture.

I love when the crispy croutons on top soak up a little flavor from the soup -- and that's what sparked the inspiration for this twist on cornbread! It's slightly sweet like a Northern-style cornbread, balanced with a hint of hops from the IPA and sharpness from the Cheddar.

1 stick (8 tablespoons) unsalted butter
1 cup all-purpose flour
1 cup fine grind cornmeal
1/3 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup cooked corn, roughly chopped (see Cook's Note)
1 cup shredded sharp Cheddar
Kosher salt
1 cup IPA beer
2 large eggs
2 tablespoons vegetable oil

Steps:

  • Place a 10-inch cast-iron skillet (see Cook's Note) on the center rack of the oven and preheat to 400 degrees F.
  • Melt 6 tablespoons of the butter and let cool in a medium heatproof bowl.
  • Whisk together the flour, cornmeal, sugar, baking powder, baking soda, corn, 3/4 cup of the Cheddar and 1 1/2 teaspoons salt in another medium bowl. Make a well in the center.
  • Add the beer, eggs and vegetable oil to the cooled butter and whisk together. Pour into the well in the dry ingredients. Stir together gently until just combined.
  • Once the oven has preheated, carefully remove the cast-iron skillet and add the remaining 2 tablespoons butter, swirling until completely melted. Pour in the cornbread batter and smooth the top. Sprinkle with the remaining 1/4 cup Cheddar.
  • Bake until the cornbread is golden brown and springs back to the touch, about 20 minutes. Remove from the oven, let cool for 10 minutes and serve.

Yield Makes one 8-inch square cornbread

1 cup all purpose flour
1 cup yellow cornmeal
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1/2 cup (packed) coarsely grated Monterey Jack cheese
3/4 cup buttermilk
2 large eggs
3 tablespoons honey
1/4 cup (1/2 stick) unsalted butter, melted

Steps:

  • Preheat oven to 425°F. Butter 8x8x2-inch metal baking pan. Whisk first 5 ingredients in medium bowl to blend. Stir in cheese. Whisk buttermilk, eggs, and honey in another medium bowl to blend. Add butter; whisk until blended. Add buttermilk mixture to dry ingredients; stir just until combined (do not overmix).
  • Transfer batter to prepared pan. Bake until tester inserted into center of bread comes out clean, about 15 minutes. Cool completely in pan on rack. (Can be made 1 day ahead. Cover; store at room temperature.)

1 cup yellow cornmeal
2 tablespoons yellow cornmeal
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 cup whole wheat flour
1 1/4 cups low-fat buttermilk
1 egg, lightly beaten
1 egg white
1/4 cup shredded sharp cheddar cheese, low fat preferred
2 tablespoons chopped mild green chilies (or to taste, I use Ortega brand in a can)

Steps:

  • Preheat oven to 425°F.
  • Coat an 8 inch square baking pan with nonstick cooking spray and dust with 2 tablespoons of cornmeal.
  • Sift into a large bowl the remaining cornmeal, baking powder, baking soda, salt and flour.
  • In another bowl, combine buttermilk, eggs, cheese and chilies, then stir into the dry ingredients.
  • Pour batter into the prepared baking pan .
  • Bake 18 minutes or until tester comes out clean. Makes 12 2 inch pieces.
