2 (8 ounce) packages cream cheese, softened
1 stick butter
1 cup milk
4 tablespoons all-purpose flour
3 (15.25 ounce) cans whole kernel corn, drained
3 canned jalapeno peppers, chopped, or to taste
salt to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a casserole dish.
  • Combine cream cheese and butter in a microwave-safe bowl and heat until melted, 1 to 2 minutes. Pour into a large skillet and add milk and flour. Cook, stirring occasionally, over medium heat until mixture thickens, 3 to 5 minutes.

5 cups chopped fresh broccoli florets
2 tablespoons water
1 (24 ounce) carton cottage cheese
4 eggs
1/4 cup melted butter
1/3 cup all-purpose flour
1 (11 ounce) can whole kernel corn, drained
2 cups shredded cheddar cheese
1/4 cup chopped green onion
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
8 slices bacon, cooked and crumbled

Steps:

  • Place broccoli in a vented covered dish; add water. Cook 4 minutes in microwave. Drain; set aside.
  • Preheat oven to 350 degrees. Combine cottage cheese, eggs, butter and flour in container of electric blender; process until smooth. Set aside.

1 (4 ounce) can chopped green chilies
1 (2 7/8 ounce) package French-fried onions, divided

Steps:

But, I'm sure that you could also use Ritz. It's obviously not a diet food. Yum!

1/2 cup sugar
2 cups crushed Club crackers (I use one sleeve)
1/2-3/4 teaspoon salt
2/3 cup milk
2 tablespoons butter

  • Beat the eggs, add corn, sugar, salt, milk and 1/2 of your crushed club crackers.
  • Dump into a greased or sprayed small baking dish. I use the 9x9 glass ones.

1 large onion, chopped
1/4 cup green pepper, chopped
2 eggs, slightly beaten
1 (15 ounce) can creamed corn

1 box Jiffy corn muffin mix
1/2 teaspoon salt
1/2 pint sour cream
4 ounces cheddar cheese, grated

1 (10 1/2 ounce) can cream of chicken soup

2 cups fresh yellow and white corn, can sub frozen
1/2 cup finely chopped onion
2 (8 ounce) garden spread cream cheese
8 ounces extra-sharp cheddar cheese, grated
2 cups finely crushed butter flavored crackers
8 tablespoons melted butter
2 tablespoons fresh parsley, chopped or 1 tablespoon dried parsley

  • Boil carrots til just tender, drain, add corn, set aside.
  • In large bowl combine well the rest of ingredients except the crackers, butter and parsley.
  • Add carrots and corn to cream mixture. *Folding in gently so as not to turn the carrots into mush!

  • Smooth top flat and even.
  • In small microwave-safe bowl, melt butter.

  • Sprinkle over casserole evenly.

1 (15 ounce) can cream-style corn
1 (8 ounce) container sour cream
1/4 c melted butter
1 (15.25 ounce) can whole kernel corn, drained
1 1/2 c shredded cheddar cheese
3/4 c chopped onion
1 (4 ounce) can diced green chilies, drained
1/2 tsp sea salt
1/4 tsp freshly ground black pepper
dash red pepper flakes, optional
1 (8.5 ounce) package dry corn muffin mix

  • 1. Preheat oven to 350 degrees. Grease a 2 quart casserole dish. In a large mixing bowl, combine eggs, cream style corn, sour cream and melted butter.
