Steps:
- In a 5 quart pot combine all ingredients minus part 2 ingredients. Bring to a boil over high heat. Reduce to medium low heat and simmer for 45 minutes or until broccoli is tender. In a seperate pan melt the margarine and add the flour until a thick paste forms. Stir some of the soup broth into the flour mixture until there is a smooth consistence and then add flour mixture to soup. Bring back to a boil and simmer for 5 minutes. Reduce heat and add the light cream, shredded cheddar cheese. Mix well and serve when the cheese is completely melted.
Tips:
- For a creamier soup, use heavy cream or half-and-half instead of milk.
- To make the soup more flavorful, use a flavorful chicken broth or stock. You can also add a bay leaf or two to the pot while the soup is simmering.
- If you want a thicker soup, add a cornstarch slurry (equal parts cornstarch and water) to the soup and bring to a boil, stirring constantly. Let the soup simmer for a few minutes, or until it reaches your desired consistency.
- For a more colorful soup, add some chopped carrots or celery.
- Serve the soup with a side of crusty bread or crackers.
Conclusion:
This cheese broccoli and chicken soup is a delicious and easy-to-make meal that is perfect for a cold night. It is also a great way to use up leftover chicken. The soup is creamy, flavorful, and filling, and it is sure to be a hit with your family and friends.
