1 (16 ounce) package sharp cheddar cheese, grated
1 cup pecans, chopped
1/2 cup light mayonnaise
1/4 cup onion, minced
1 garlic clove, minced
1/2 teaspoon Tabasco sauce
1 cup strawberry preserves

Steps:

  • Combine all the ingredients except the strawberry preserves.
  • Mix well and chill for 2 to 3 hours.
  • shape the mixture into a ball, or put it in an attractive serving dish.
  • Another serving option is to press the dip into a lightly greased ring mold.
  • If served as a cheese ball or spread, surround it with the strawberry preserves or put the preserves on the side.
  • If served as a mold, fill the center with the preserves.

1 pound sharp cheddar cheese
1 cup chopped pecans
1 cup mayonnaise
2 tablespoons finely grated onion
¼ teaspoon ground black pepper
⅛ teaspoon cayenne pepper
12 ounces strawberry preserves ((small jar))

Steps:

  • Lightly toast the pecans in the oven at 350 degrees or in a dry skillet over medium heat. Let cool. Set aside 2 tablespoons of pecans for garnish.
  • Grate the cheese with a box grater or food processor. Finely grate the onion.
  • Put all ingredients (except strawberry preserves) in a medium mixing bowl. Mix with a wooden spoon until thoroughly combined.
  • Turn the mixture out onto a board or serving plate. Using your hands, shape into a ring. Place preserves in the center of the ring. Sprinkle with the reserved pecans.
  • Serve with assorted crackers.May be made ahead and refrigerated. Keeps well for a few days in the refrigerator. Bring to room temperature before serving.

1 cup chopped pecans
1 pound sharp cheddar cheese
1 small onion, grated (see notes)
1 cup mayonnaise
1/2 teaspoon cayenne pepper
Strawberry preserves

Steps:

  • Toast pecans in a large skillet over medium-high heat until fragrant and slightly browned. Remove pecans from skillet to cool. Set aside a few tablespoons to garnish the cheese ring before serving if desired.
  • Shred cheese then add to a large mixing bowl. Add grated onion, mayo, cayenne pepper and toasted pecans then mix until thoroughly incorporated.
  • Spoon cheese mixture onto a serving plate then shape into a ring. This isn't as hard as it sounds - I easily shape mine using a rubber spatula. Cover with plastic wrap then refrigerate for at least 2 hours.
  • Remove cheese ring from refrigerator 30 minutes before serving. When ready to serve, sprinkle reserved pecans on top of ring then spoon strawberry preserves into the center of the ring. Serve with crackers.

cracker, of your choice (I like whole grain crackers)

Steps:

  • Combine cheese with mayo, chopped nuts and onions.
