Submitted to Taste of Home magazine by Mark Trinklein. The first time I made this, it was as part of a romantic dinner I made for Valentine's Day. Very good and a keeper! It reheats well, too. I wouldn't hesitate to make it in advance.

Tips:

  • To make the soup creamy, blend a cup of the cooked potatoes and broth mixture until smooth before adding it back to the pot. This will help thicken the soup and give it a velvety texture.
  • For a smoky flavor, roast the potatoes in a 400°F oven for 30 minutes before adding them to the soup. This will caramelize the potatoes and add a depth of flavor to the soup.
  • If you don't have any evaporated milk, you can use 1 cup of regular milk and 1/4 cup of butter. Just be sure to melt the butter before adding it to the soup.
  • To make the soup ahead of time, cook it according to the instructions and then let it cool completely. Store the soup in an airtight container in the refrigerator for up to 3 days. When you're ready to serve, reheat the soup over medium heat until warmed through.
  • Garnish the soup with shredded cheddar cheese, crumbled bacon, or chopped green onions before serving.

Conclusion:

This Cheddar's Restaurant Potato Soup is a hearty, comforting dish that is perfect for a cold winter day. It is also surprisingly easy to make, and it can be tailored to your own taste preferences. So next time you're in the mood for a delicious and satisfying soup, give this recipe a try. You won't be disappointed!
