1 1/2 pounds zucchini (about 3 large, grated)
1 1/2 teaspoons salt
6 ounces Cabot Vermont Sharp Cheddar Cheese
1 3/4 cup panko
1/2 cup finely chopped parsley
2 eggs
1 large shallot (finely chopped)
3 cloves garlic (minced)
2 tablespoons dijon mustard
1/2 teaspoon lemon zest
1/2 teaspoon pepper
Lemon Parsley Dipping Sauce
1/2 cup sour cream
3 tablespoons finely chopped parsley
Juice of half a lemon
1 tablespoon water
1 teaspoon dijon mustard
Salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees. Line two baking sheets with parchment and lightly spray with non-stick spray.

1/4 cup cornstarch
1 1/2 cups grated cheddar cheese
2 green onions, thinly sliced
1 egg white
1/4 teaspoon salt
