1/4 cup + 2 Tablespoons BBQ sauce, divided
1/4 cup gluten free panko-style bread crumbs

2oz cheddar cheese, cut into 1/4" cubes

Steps:

  • Cut onion in half then each half into thin slices. Melt butter in a large skillet or pot over medium heat then add onion and a dash of salt. Cook, stirring every couple of minutes, until onions are golden brown and caramelized, about 20 minutes. Turn heat down if onions start to burn. 1 c bread crumbs
2 c cheese, shredded
2 eggs
1 large sweet onion, chopped
1 c barbecue sauce, divided use
1 Tbsp worcestershire sauce
3/4 tsp salt
1/2 tsp pepper

Steps:

  • 1. Preheat the oven to 350°F
  • 2. In a skillet, saute the onion until lightly browned, about 5 minutes.
  • 3. In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, cheese, eggs, sauteed onion, 1/2 cup of the barbeque sauce, worcestershire sauce, salt, and pepper
  • 4. Shape the mixture into a loaf and place in a large 2" deep baking pan. Spread the top of the loaf with the remaining 1/2 cup of barbeque sauce.
