2/3 cup yellow cornmeal
Coarse salt

1 cup sharp white cheddar cheese
4 large eggs, separated

Steps:

  • Preheat oven to 400 degrees. Butter a 2-quart souffle dish or casserole; set aside. In a medium saucepan, combine butter, milk, corn, cornmeal, 1 teaspoon salt, and cayenne. 2 tablespoons chopped parsley
2 tablespoons chopped fresh chives
¼ cup dry white wine

1/2 cup of hominy corn (both found in cans) or 1/2 cup creamed corn (both found in cans)

Steps:

  • Preheat the oven to approximately 375°F and have ready a casserole dish, approximately 8x10 inches, lightly buttered.
