1/2 bunch fresh chives, finely chopped (about 1/4 cup)

Steps:

  • Preheat oven to 350 degrees. Peel potatoes, and cut into 1-inch chunks. Place in a large saucepan, and add enough cold water to cover by about 2 inches. Bring to a boil over medium-high heat, and reduce to a simmer. Cook until tender and easily pierced with a paring knife, about 20 minutes. Transfer to a colander to drain; return to pan, cover, and set aside.

Coarse salt
3/4 cup whole milk
2 tablespoons butter
1/2 cup shredded white cheddar, plus more for garnish (optional)

Steps:

  • Place potatoes in a medium saucepan. Cover with cold water by 1 inch; add 1 teaspoon salt. Bring to a boil; reduce to a simmer, and cook until potatoes are tender, 15 to 18 minutes.
  • Drain and return potatoes to pan. Stir potatoes over medium heat until dry (a film of starch will form on bottom of pan), about 1 minute. Remove from heat.
  • In a small saucepan, bring milk and butter to a simmer over medium heat; pour half of milk mixture over potatoes. 1 small onion, finely chopped
3 slices bacon, bite size pieces
5 -6 roasted garlic cloves, minced (roast in oven on 450 for approx. 30 min.)
1 jalapeno, finely chopped (seeds and ribs included)
1/2 cup 2% low-fat milk
1/4 cup butter
1 tablespoon butter
6 ounces sharp cheddar cheese, shredded
salt and pepper, to taste
1 teaspoon dried oregano
1 teaspoon garlic powder
canola oil
extra virgin olive oil

Steps:

  • Place garlic in foil and wrap tight. Place in 450 degree oven and roast 30 minutes. Remove and let cool.
  • Place the potatoes in a medium saucepan and cover with cold water and liberally add salt. Set heat to high and let potatoes come to a boil for about 15 minutes until fork tender.

1 (7 ounce) can chipotle chiles in adobo
4 lbs cubed, peeled yukon gold potatoes
6 cloves garlic, peeled
1 1/2 cups shredded reduced-fat sharp cheddar cheese
3/4 cup 2% low-fat milk or 3/4 cup 1% low-fat milk
3 tablespoons butter, softened
1 teaspoon salt

Steps:

  • Remove 1 chile and 1 tablespoon adobo sauce from can.
  • (more if you wish, to taste) Chop chile to measure 1 tablespoon.
  • Reserve remaining chiles and adobo sauce for another use.
  • Place potato and garlic in a large dutch oven, cover with water and bring to boil.
  • Cook 15 minutes or until potato is tender, Drain.
  • Return potato mixture to the dutch oven.
  • Add chopped chile and adobo sauce, cheese, and remaining ingredients.
  • Mash to desired consistency with a potato masher.
  • Cook 3 minutes over medium heat or until thoroughly heated, stirring constantly.

36 garlic cloves
1/3 c olive oil
5 lb russet potatoes, peeled, cut into 1-inch pieces
2 c grated sharp white cheddar cheese, packed (about 8 ounces)
4 oz cream cheese, room temperature
1/4 c unsalted butter, room temperature
1 1/2 tsp minced canned chipotle chilies

Steps:

  • 1. Preheat oven to 350°F. Toss garlic with oil in baking pan. Cover with foil; bake 30 minutes. Uncover; bake until garlic is tender, about 15 minutes. Cool; peel and chop.
  • 2. Cook potatoes in large pot of boiling salted water until tender, about 25 minutes. Drain. Transfer potatoes to large bowl. Add garlic and remaining ingredients.
