2 T sugar
2 1/2 t baking powder
1/2 t baking soda
1/2 t kosher salt
1 stick cold unsalted butter--cubed
1 C cold whole milk
1 C shredded aged cheddar cheese
1/4 finely chopped pickled jalapenos
1 large egg, lightly beaten

Scatter the cubed butter over the dry ingredients and using your fingers, pinch the butter into the flour until the mixture resembles very coarse crumbs, with some of the butter the size of small peas. Gently stir in the milk, cheddar and jalapenos just until a shaggy dough forms. 2. Turn the dough out onto a lightly floured work surface and knead gently just until it comes together. pat the dough out to a 1/2-inch thick rectangle. Using a 3-inch round biscuit cutter, stamp out 10 to 12 biscuits. Gently press the scraps together and stamp out more biscuits. Arrange on the prepared baking sheet and freeze for 30 minutes. 3. Preheat the oven to 375. Brush the biscuits with the beaten egg and bake until golden brown, about 15 minutes. Serve hot or warm. Note: the unbaked biscuits can be transferred to a sturdy bag and frozen for up to one week.

Tips:

  • Use cold butter: This will help create flaky layers in the biscuits.
  • Grate the cheese finely: This will help it distribute evenly throughout the biscuits.
  • Don't overmix the dough: Overmixing will make the biscuits tough.
  • Let the dough rest for at least 30 minutes before rolling it out: This will help the dough relax and make it easier to work with.
  • Cut the biscuits into even-sized pieces: This will help them bake evenly.
  • Bake the biscuits in a hot oven: This will help them rise quickly and create a golden brown crust.
  • Serve the biscuits warm with your favorite toppings: such as butter, honey, or jam.
