Tips:

  • Choose the right flour: All-purpose flour is a good choice for these muffins, but you can also use whole wheat flour or a gluten-free flour blend. If you use whole wheat flour, be sure to add an extra 1/4 cup of milk to the batter.
  • Use fresh ingredients: Fresh herbs and cheese will give your muffins the best flavor. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use half the amount called for in the recipe.
  • Don't overmix the batter: Overmixing the batter will make your muffins tough. Stir just until the ingredients are combined.
  • Fill the muffin cups evenly: Be sure to evenly distribute the batter among the muffin cups. This will help the muffins bake evenly.
  • Bake the muffins at a high temperature: Baking the muffins at a high temperature will help them rise and brown properly. Be sure to preheat your oven before baking the muffins.
