Steps:

  • Preheat a grill to medium high. Melt the butter in a medium saucepan over medium heat. Add the flour and mustard powder and cook, stirring, 3 minutes. 2 pounds ground chuck

4 thick slices Cheddar or American cheese
4 pretzel buns
4 tablespoons unsalted butter
1 small onion, finely chopped
4 tablespoons all-purpose flour
2 cups light beer, such as lager
1 1/2 cups heavy cream
1 clove garlic, grated
Kosher salt and freshly ground black pepper
6 ounces grated sharp Cheddar
6 ounces grated Swiss cheese

Steps:

  • For the burger: Preheat the oven to 350 degrees F.
  • Place the bacon on a rimmed baking sheet and bake until golden brown but not completely crisp, 15 to 20 minutes. Keep warm for the burgers.
  • For the beer cheese sauce: Meanwhile, melt the butter in a heavy-bottom saucepan over medium heat. Add the onions and cook until soft, 2 to 3 minutes. Add the flour and cook, stirring, until the roux starts to brown, about 2 minutes. Whisk in the beer until smooth.

In a medium bowl, gently fold the ground beef with 1 to 2 teaspoons salt and some pepper to season, and divide into four equal portions. Form each portion of meat into a ball and press your thumb into the center. Place a cold slice of butter into each indent and cover over with some meat, pressing each ball into a patty so the butter is in the center. Hold the patties on a plate for cooking.
  • Heat a grill pan over medium high heat, and brush with oil. When the pan is hot, add the patties, spacing them evenly. Cook on one side until browned, about 5 minutes, and then flip the patties and cook to desired doneness, adding the cheese slices in the last 2 minutes.
  • Butter both sides of the pretzel buns and place on the grill pan, cut-side down. Grill until golden brown and toasted. Place the buns onto plates, and place the patties onto the toasted buns. Top each burger with 2 bacon slices and 1/4 cup beer cheese sauce. Serve immediately.

2 tablespoons corn starch
½ cup beer, Plus 2 additional Tbsp.
1 lb pizza dough
5 cups water
¼ cup baking soda
1 egg
coarse salt, to taste

Steps:

  • Slice a small piece of your pizza dough, roll it into a ball then flatten it out.
  • Toss the cheddar cheese with the corn starch until it's evenly distributed.
  • In a medium saucepan, bring ½ cup (120 ml) of beer to a simmer.
  • Add in the cheese and corn starch mixture and whisk until it begins to thicken. Once thick, take off the heat.
  • NOTE: It may cool and become more solid over time, but don't worry! It will melt back down in the oven, so this is fine.
  • Preheat the oven to 425°F (220°C).
  • Place a small spoonful of the beer cheese mixture in the center of the dough.
  • Pick up the top and bottom edges and bring them up and together. Do the same with the left and right edges. Continue bringing in the rest of the edges of the dough until it all meets in the center and there are no gaps for the cheese to leak out of during baking.
  • NOTE: You can pick up and twist the top of the dough to make sure everything is more secure.
  • Bring five cups of water to a boil in a medium pot. When you've finished putting together your pretzel bites, add the baking soda to the water and immediately scoop in your pretzel bites. Boil for 20-30 seconds,
  • Take out and place on a baking sheet lined with parchment paper.
  • In a small bowl, combine one egg and two tablespoons of beer and beat with a fork until they are well blended.
  • Brush the mixture onto the top of each pretzel bite, then top with coarse salt.
  • Bake for 15-20 minutes (or until they have browned).

2 1/2 lbs ground beef
1 onion, diced
6 garlic cloves, chopped
2 teaspoons dried oregano
4 teaspoons dried thyme
1 egg
10 ounces dark beer
1/4 cup fresh parsley, chopped
1 teaspoon celery salt
1 teaspoon black pepper

Steps:

  • Sauté onion, garlic, thyme and oregano over medium heat until onion is translucent, about 3 minutes. Let this cool completely.
  • Add ground beef, onion mixture and egg together in a large bowl and mix until thoroughly blended. Slowly stir in stout beer, while mixing. You may want to add less beer than called for here if you find it is getting too thin, or more yet. Then add parsley, celery salt and black pepper and mix well.
