2 cups all-purpose flour
½ cup white sugar
1 tablespoon baking powder
1 teaspoon salt
½ teaspoon baking soda
1 ½ cups shredded Cheddar cheese
1 cup plain yogurt
2 eggs, beaten
¼ cup butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 large muffin cups.
  • Mix flour, sugar, baking powder, salt, and baking soda together in a large mixing bowl; stir Cheddar cheese into the flour mixture. Pour yogurt, eggs, and butter over the flour mixture; stir until the dry ingredients are just moistened. Spoon the batter into the prepared muffin cups.

2 cups all-purpose flour
1/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1-1/2 cups shredded cheddar cheese, divided
1/3 cup grated Parmesan cheese
1 large egg
1 cup buttermilk
1/4 cup vegetable oil
2 medium tart apples, peeled and chopped

Steps:

  • In a large bowl, combine the first six ingredients; stir in 1 cup cheddar cheese and Parmesan cheese. In a small bowl, beat the egg, buttermilk and oil; stir into dry ingredients just until moistened. Fold in apples. , Fill greased or paper-lined muffin cups three-fourths full. Sprinkle with the remaining cheddar cheese. Bake at 400° for 20-22 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

2 cups baking mix (Bisquik)
1/4 cup sugar
1 teaspoon cinnamon
1 egg, well beaten
1/2 cup unsweetened applesauce
1/4 cup milk
2 tablespoons oil
1 cup finely shredded sharp cheddar cheese
1/2 cup finely chopped walnuts

Steps:

  • In a large bowl combine baking mix, sugar, and cinnamon.
  • In a seperate bowl combine egg, applesauce, milk, oil and cheese.
  • Add to dry ingredients.
  • Fold in walnuts.
  • Grease or spray muffin pan.
  • Fill each cup 2/3 full.
  • Bake in a 400 degree oven for 15-20 min or until light golden.
  • Cool muffins in pan for 10 minutes.
  • Run sharp knife around muffin to loosen and remove from pan.
