Ham, Cheddar, and Apple Butter Open-Faced Sandwiches (Or Pizza) image

This is published in the October 2004 Bon Appetit as open-faced sandwiches, but I make this as a 12-inch pizza (a big, round, open-faced sandwich?). I wasn't sure whether we would like the sweetness of the apple butter, but there is enough savory/salty flavor in the rest of the recipe that it works well (I probably used more Dijon, though, and less apple butter, than called for in the recipe). In pizza format, it is good with some sauteed onion and some very well wrung out thawed frozen spinach added. I think this is a recipe that depends a lot on the types of ingredients used; since it has the apple butter, sweeter mustards and milder cheeses would probably not be as good. The relative proportions of Dijon and apple butter (and meat and cheese) can be adjusted for personal taste.

3 ciabatta rolls, halved horizontally (or 6 slices country-style bread)
2 tablespoons olive oil
6 tablespoons apple butter
4 tablespoons Dijon mustard
1 1/4 lbs black forest ham, thinly sliced (I ended up with smoked turkey, and used less than half this amount)
12 ounces white cheddar cheese, extra sharp, sliced (can use non-white and adjust amount to taste)
1 bunch chives, chopped (optional)

Steps:

  • Brush cut side of rolls with oil.
  • Place rolls, cut side up, on baking sheet, and broil until rolls begin to brown around edges, about 2 minutes. For pizza, use crust of choice, brush with a light coating of oil, and prebake.
  • Spread apple butter and mustard on each roll half. For pizza, spread the mustard over the whole crust and add the apple butter as small dollops (over whole crust).
  • Top with ham, then cheese (if using onion/spinach addition, add after ham or any desired order).
  • Broil until cheese melts and begins to brown in spots (2 minutes for sandwiches; if baking a pizza, probably 7 to 8 minutes--not under broiler--are fine depending on the directions for the dough used). It is good if some of the edges of the sliced meat get a little singed!
  • Optional: sprinkle with chopped chives. Black pepper is a good addition at the end as well.

1 (9 inch) pastry for single-crust pie
4 large apples, peeled and cut into 1/4 inch slices (approx 5 cups)
1/2 cup cheddar cheese, shredded
1/2 cup brown sugar
1/2 cup pecans, chopped
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg, freshly ground
2 tablespoons cold butter
3 tablespoons maple syrup
1/4 cup golden raisin

Steps:

  • Roll pastry to approx 12 inches (you can use a pizza pan or baking stone).
  • Bake crust at 400 degrees for 10 minutes.
  • Arrange apples in a single layer in a circular pattern to completely cover pastry.
  • Sprinkle with cheese.
  • Combine brown sugar, pecans, spices, raisins and maple syrup in a small bowl.
  • Sprinkle brown sugar mixture over apples and cheese.
  • Cut butter into small pieces and dot top of pizza.
  • Bake for 20 minutes longer or until apples are tender.

1 package of ready made pizza
2 Granny Smith apples, peeled, coarsely chopped
4 tablespoons (2 ounces) butter
1/2 lemon, juiced
2 tablespoons raisins
2 tablespoons sugar
2 tablespoons slivered almonds
1 cup (8 ounces) Sharp Cheddar cheese, grated, 1/2 cup will be used in the pizza filling and 1/2 cup will be sprinkled on top of the pizza

Steps:

  • Preheat oven to 425 degrees Fahrenheit. Saute two coarsely chopped Granny Smith apples in butter until softened. Add lemon juice, raisins and sugar. Transfer to a mixing bowl, leaving as much butter as possible in the saute pan. Add almond slivers to saute pan, slightly toast. Mix with apple mixture. Cool. Add 1/2 cup of Cheddar cheese. Roll ready-made pizza dough into 12-inch thin circle on floured work space. Place filling in center of the pizza crust, not to cover completely. Sprinkle with 1/2 cup of Cheddar cheese. Bake on parchment paper for 12-15 minutes.

1 medium apple, peeled and thinly sliced
1 pkg cheddar cheese 8 oz (orange or white)
1/4 lb deli ham, sliced into ribbons
1 medium onion, thinly sliced
1 c fresh spinach leaves (frozen can be used - squeezed dry)
1 tsp fresh thyme
1 tsp prepared mustard
1 tsp white wine vinegar
1 tsp fresh ground black pepper
1/4 tsp salt
1/4 tsp red pepper (optional)
1 Tbsp olive oil

Steps:

  • 1. Stretch pizza dough onto pizza stone dusted with corn meal (optional, makes for a crunchy crust). Saute onions in 1 tbsp olive oil. Add thyme, mustard and white wine vinegar. Cook until onions start to turn slightly brown. Salt and pepper to taste...1/8 tsp each.
  • 2. Preheat grill to 475 or oven to same. Sprinkle onion onto dough and evenly spread. Then place spinach leaves overlapping to cover pie. Place sliced apples over spinach sprinkle with salt, black pepper and red pepper... If using...Then top with cheddar cheese and ham ribbons.
  • 3. Cook for 8-10 minutes (oven might need 3-5 more minutes) or until crispy and enjoy :)
