Cheesy Chicken Casserole has pasta in a creamy cheesy sauce baked until golden and bubbly.

3 cups shell noodles (uncooked )
3 tablespoons butter
⅓ cup red bell pepper (diced)
1 onion (finely diced)
½ teaspoon seasoning salt
1 teaspoon chili powder
10 ¾ ounces cream of chicken soup (condensed)
1 ⅓ cups milk
3 cups sharp cheddar cheese (shredded, divided)
⅓ cup parmesan cheese (shredded)
4 ounces mild green chiles
3 cups cooked chicken

Steps:

  • Heat oven to 375°F.
  • Cook shells al dente according to package directions.
  • Cook onion and red bell pepper in butter until tender, about 5 minutes. Stir in salt and chili powder.
  • In a large bowl combine soup, onion mixture, milk and 2 cups cheddar cheese and parmesan cheese. Mix well. Stir in chicken, pasta and green chiles.
  • Spread into a 9x13 casserole dish. Top with remaining cheese.
  • Bake 30-35 minutes or until hot and bubbly.

I wanted a spinach dish and was trying to find something to go with it and still uses the chicken patties I had gotten out of the freezer this is it. And we really liked it, always a plus.

2 fully cooked frozen chicken patties (defrosted)
1 bunch of asparagus minus the top third (use somewhere else )
1 c small elbow mac (uncooked)
1/4 c pesto
1/2 onion, chopped
1 clove garlic, diced
2/3 c mozerella cheese

Steps:

  • 1. Take the asparagus and chop off the top third to use another night or as a side. Then with the bottom part start from the top and cut them in 2/3's of an inch pieces until the knife hits the stringy part and discard the rest. Continue with the rest of them. Place in a small sauce pan and Turn on high until it boils and turn off heat and let sit 15 minutes while doing the rest of the stuff
  • 2. Cook noodles drain, add pesto sauce stirring well and set aside.
  • 3. Cut each chicken patty into bite sized chunks.I did 4 slices and cut them into thirds, making 12 bite sized pieces each, 24 in all. Cook chicken in a pan by it's self and fry until nicely crispy. set on simmer while doing the rest. Turning as needed.
  • 4. Chop onions and garlic and place in a sauce pan in a saucepan and cook on medium until onions are cooked.
  • 5. Take out and drain the cooked asparagus and add to the onion mix in the pan. Add the noodles in pesto sauce and mix well on low heat until all is hot again and add chicken and mix well.
  • 6. top with cheese and either place under broiler or mic 1 minute until cheese melts. Serve
