A lady who works with me brought this one day to one of our get togethers. It was the best dip I have ever tasted. I don't know where it originated from. I make it to take to work when we have finger-food day. People are always asking for the recipe.

Steps:
- Mix first four ingredients together in a bowl.
- Place in a greased quiche or small casserole dish.
- Top with crumbled crackers.
- Bake at 350°F for about 15 minutes.
- Take out and sprinkle with crumbled bacon.
- (I usually make this with the reduced fat cream cheese and cheddar cheese, it still tastes great. I also like to use the real bacon bits that are sold in the bag. You can find them where the salad toppings are. This is much easier and less greasy than fried).

I received this recipe from a friend at work. I love this recipe, because I usually have all of these ingredients on hand, and can fix it with very little notice.

Tips:
- Use fresh ingredients: Fresh vegetables, herbs, and spices will give your dip the best flavor. If possible, use ingredients that are in season.
- Don't overcook the vegetables: Vegetables should be cooked until they are tender, but not mushy. Overcooked vegetables will lose their flavor and texture.
- Use a variety of cheeses: A combination of different cheeses will give your dip a more complex flavor. Try using a mix of hard, soft, and semi-soft cheeses.
- Season the dip to taste: Add salt, pepper, and other spices to taste. You can also add a bit of heat with cayenne pepper or chili powder.
- Serve the dip warm: Charleston cheese dip is best served warm, so make sure to heat it through before serving. You can also keep the dip warm in a slow cooker.
