This Classic Cherry Delight comes together in just minutes and is made of three simple layers. If you want a dessert that's not overly sweet yet delicious, this is it!

7 tablespoons unsalted butter
1 1/2 cups graham cracker crumbs (about 9 whole crackers)
3 tablespoons granulated sugar
8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon pure vanilla extract
1 container cool whip, 8 ounces
1 can cherry pie filling, 21 ounces

Steps:

  • Add the butter to a medium bowl. Microwave for 30 seconds or until melted. Add the graham cracker crumbs and sugar and mix well to combine. Pat the crumb mixture firmly into the bottom of a sprayed 8 x 8 baking dish. Set aside.
  • Add the cream cheese to a large bowl. Mix with a mixer until the cream cheese of smooth and free of any lumps. Add the powdered sugar and vanilla and mix well. Add the cool whip and mix until the cool whip and cream cheese are combined, but don't overmix.
  • Spread the filling evenly over the graham cracker crust, using a spoon or offset spatula. Spoon the cherry pie filling over the top and carefully spread it evenly over the filling.
  • Refrigerate for at least 2 hours before serving. I like to leave it overnight.
  • Refrigerate leftovers.

1 cup margarine
1/2 cup sugar
1/2 cup Karo light corn syrup
2 eggs, divided
2 1/2 cups flour
2 cups nuts, finely chopped (we omit sometimes)
candied cherry, halved

  • Mix margarine and sugar until fluffy.
  • Stir in Karo syrup and egg yolks; mix well.
  • Mix in flour.
  • Chill.
  • Roll into 1 inch balls.
  • Dip into slightly beaten egg whites and roll in chopped nuts.

  • Press candied cherry halves into centers.

¼ cup granulated sugar
½ teaspoon kosher salt
½ cup heavy whipping cream
2 (8-oz.) pkg. cream cheese, softened
½ cup sour cream
1 cup (about 4 oz.) powdered sugar
1 teaspoon vanilla extract
1 (21-oz.) can cherry pie filling

Steps:

  • Preheat oven to 350°F. Stir together graham cracker crumbs, melted butter, granulated sugar, and salt in a large bowl until combined. Press mixture evenly into bottom of an 11- x 7-inch baking dish. Bake in preheated oven until crust is toasty and edges are golden, 12 to 14 minutes. Transfer baking dish to a wire rack; let crust cool completely, about 45 minutes.
  • Beat heavy whipping cream in a medium bowl with an electric mixer on medium-high speed until stiff peaks form, about 1 minute. Set whipped cream aside. Beat cream cheese and sour cream in a large bowl with an electric mixer on medium speed until smooth, about 1 minute. Add powdered sugar and vanilla; beat until light and fluffy, about 2 minutes.
  • Fold half of whipped cream into cream cheese mixture using a rubber spatula until just combined; repeat with remaining whipped cream. 15 graham crackers, crushed
3 tablespoons butter, melted
24 marshmallows (large ones)
1/2 cup milk
1/2 pint whipping cream
1 teaspoon vanilla
1 (21 ounce) can cherry pie filling

Steps:

  • Combine graham cracker crumbs and the melted butter.
  • Pack half of that mixture in bottom of 8x8 dish.
  • Melt marshmallows in milk in double boiler and let cool.
  • Add whipped cream and 1 teaspoon of vanilla to marshmallow mixture.

If you make the cookies before me, please leave a review to let us know how good they are. FYI, the author did not indicate how many cookies the recipe makes so I guessed. I will post a correction as soon as I know better. Oh, one more thing - the book was fun to read. (Author's note about this recipe: "A plate of these should be in every psychiatrist's office - - two Chocolate-Covered Cherry Delights will lift anyone out of a depression)

1 cup butter, melted
2 cups white sugar
2 eggs
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

1 cup cocoa powder
3 cups flour (not sifted)
2 (10 ounce) jars maraschino cherries
2 cups chocolate chips (6 oz package)
1/2 cup sweetened condensed milk

Steps:

  • Preheat oven to 350°F, rack in middle position.
  • Melt butter and mix in sugar.
  • Let mixture cool.
  • Add eggs, mix thoroughly.
  • Add baking powder, baking soda, salt, vanilla and cocoa, stirring after each addition.
  • Add flour and mix well (dough will be stiff and a bit crumbly).
  • Drain cherries, remove stems, reserve juice.
  • Pat dough into walnut-sized balls.
  • Place on a greased cookie sheet, 12 to a standard sheet.
  • Press down in center with thumb to make a deep indentation.
  • Place one cherry in each indentation.
  • In a saucepan, over simmering water (double boiler), combine the chocolate chips and condensed milk.
  • Heat on low until the chips are melted.
  • Add approximately 1/8 cup of reserved cherry juice and stir to a thick sauce.
  • If sauce is too thick, carefully add a little more juice. Test with a teaspoon. If it doesn't glob off, it is too thick.
  • Spoon the sauce over the center of each cookie, just enough to cover each cherry. Make sure it doesn't drip down the sides.
  • Bake at 350°F for 10-12 minutes.
  • Let cool on cookie sheet for 2 minutes.
  • Remove to rack to finish cooling.
