1 pound Hatch chile peppers, halved and seeded
1 (3 pound) boneless pork roast, cubed
2 cups all-purpose flour
3 tablespoons salt, divided
3 tablespoons coarsely ground black pepper, divided
¼ cup vegetable oil
2 cups chicken stock
1 (15 ounce) can diced tomatoes with green chile peppers
1 large sweet onion, chopped

  • Place cubed pork in a resealable plastic bag; coat with flour, 2 tablespoons salt, and 2 tablespoons pepper. Heat oil in a skillet over medium heat. Cook pork in the hot oil until browned, 5 to 7 minutes. Transfer to a slow cooker set to High.

Yield Serves 20

Number Of Ingredients 12

1 (1-pound) bag dried pinto beans, picked over and rinsed
2 1/2 pounds ground beef chuck
2 pounds ground pork
3 large bell peppers of assorted colors, chopped
2 large onions, chopped
1/2 cup chili powder
2 tablespoons cumin seeds
1 teaspoon dried oregano
1 (28-ounce) can plus 1 (14 1/2-ounce) can diced tomatoes, with their juice
1/2 cup fresh parsley leaves, chopped
Salt and freshly ground pepper, to taste
Chopped onion, shredded cheddar cheese, sour cream, and salsa for garnish

Steps:

  • 1. Soak the dried beans according to the package directions and drain. In a pot, combine the beans with enough water to cover by two inches. Bring just to a boil. Reduce the heat and simmer the beans until almost tender, about an hour.
  • 2. Set an eight-quart Dutch oven over medium-high heat. In batches, add the beef and pork. Cook, breaking the meat up with a spoon, until well browned (don't crowd the pot or the meat will steam, not brown). Transfer each batch to a bowl using a slotted spoon.
  • 3. Heat the drippings in the same pot over medium heat. Add the bell peppers, onions, chili powder, cumin seeds, and oregano; cook, stirring occasionally, until the vegetables are softened, about 15 minutes. Add the tomatoes with their juice and the reserved meat, and simmer for one hour. Add the beans and simmer until the chili is thickened and the beans are tender, about an hour longer. Stir in the parsley, salt, and pepper. Garnish each serving with onion, cheese, sour cream, and salsa.

CHAR SIU

This is the classic red-cooked barbecued pork that's a favorite in Chinese-American restaurants. It's delicious on its own, but it's also used for dishes like fried rice, lo mein and pork buns. I always keep some frozen and ready. This is also a great dish to cook in the air fryer.

Time 9h30m

Yield Makes about 2 pounds pork

Number Of Ingredients 11

1/2 cup (120 milliliters) soy sauce
6 tablespoons (90 milliliters) hoisin sauce
6 tablespoons (90 milliliters) ketchup
1/3 cup (80 milliliters) Chinese oyster sauce
1/2 cup (120 milliliters) honey
1/4 cup (50 grams) granulated sugar
2 tablespoons (30 milliliters) sherry
1 tablespoon grated fresh ginger
1/2 teaspoon Chinese five-spice powder
2 drops red food coloring, optional
2 pounds (900 grams) pork butt

Steps:

  • To make the marinade, stir the soy sauce, hoisin sauce, ketchup, oyster sauce, 1/4 cup of the honey, the sugar, sherry, ginger, five-spice powder and food coloring if using together in a large bowl. Set aside.
  • Cut the pork into strips 6 inches long and 3 inches wide. Place the strips flat in a shallow baking dish. Pour the marinade over the pork strips and refrigerate 8 hours or overnight.
  • When ready to roast the pork, position one rack to the lowest part of the oven and another rack about 5 inches above it. Preheat the oven to 350 degrees F (175 degrees C).
  • Drain the pork; place the marinade in a small saucepan. Bring to a rolling boil. Remove from the heat and stir in the remaining 1/4 cup honey.
  • Place a shallow roasting pan on the bottom rack of the oven and fill the pan about three-quarters full with water. Carefully place the pork strips on the oven rack above the roasting pan so all sides of the pork strips are exposed to heat and all are over the pan to catch drips.
  • Roast the pork for 30 minutes. Baste the pork strips with the honey mixture and roast for 15 minutes and baste again. Roast until the pork strips are crisp and golden brown, about 10 minutes longer.
  • Remove the pork from the oven and let cool. To serve, slice the strips across into 1/2-inch strips and smother with reserved sauce.

Tips:

  • For a vegetarian version, use vegetable broth instead of beef broth and omit the ground beef. To compensate for the umami flavor of the beef, add a tablespoon of soy sauce or a couple of tablespoons of nutritional yeast.
  • To add a smoky flavor to the chili, char the poblano pepper and jalapeño pepper over an open flame or under a broiler. Once charred, place the peppers in a paper bag and let them steam for 10 minutes. This will make the peppers easier to peel and remove the seeds.
  • To make the chili more spicy, add an extra jalapeño pepper or a teaspoon of cayenne pepper. You can also add a pinch of chipotle powder for a smoky heat.
  • For a thicker chili, mash some of the beans with a fork or potato masher. This will help to create a thicker, more stew-like consistency.
  • To serve, garnish the chili with shredded cheese, sour cream, avocado, and cilantro.

Conclusion:

This char-heel chili is a delicious, hearty, and flavorful dish that is perfect for a cold day. The combination of charred poblano and jalapeño peppers, ground beef, beans, and tomatoes creates a rich and complex flavor that is sure to please everyone at the table. Whether you serve it with cornbread, rice, or tortillas, you are sure to enjoy this easy-to-make chili.
