ARIZONA CHAMPAGNE MUSTARD

Arizona Champagne Mustard image

So, where in the heck's the champagne?? When it's 110 degrees in the shade, your mind can play strange tricks. I thought I'd post this as a memory of good times in Arizona. If you can't take the heat, get out of the kitchen, head for California and wonder about the champagne. Recipe from the Arizona Republic, as I recall.

Time 12h15m

Yield 1 1/2 cups, 20 serving(s)

Number Of Ingredients 7

1/2 cup dry mustard (4 oz.)
1/2 cup cider vinegar
1 beaten egg
1/2 cup sugar
1 dash salt
1 teaspoon cornstarch
1 cup good mayonnaise

Steps:

  • Mix dry mustard with vinegar and let stand in refrigerator overnight.
  • The next day, bring to room temperature and cook with a mixture of the beaten egg, sugar, salt and cornstarch.
  • Cook slowly, stirring, until mixture boils and thickens, 10-15 minutes.
  • Let cool and add the mayonnaise.
  • Stir well.
  • Stay cool.

Tips:

  • Choose the right Champagne: Not all Champagnes are created equal. For this recipe, you'll want to use a dry Champagne that has a high acidity. This will help to balance out the sweetness of the mustard and the sharpness of the dill.
  • Use fresh herbs: Fresh herbs add a lot of flavor to this mustard. If you can, use freshly chopped dill and parsley. If you don't have fresh herbs on hand, you can use dried herbs, but they won't be as flavorful.
  • Don't over-blend the mustard: You want the mustard to have a slightly chunky texture. If you over-blend it, it will become too smooth and lose its flavor.
  • Taste the mustard before you serve it: The flavor of the mustard will vary depending on the type of Champagne and herbs you use. Be sure to taste it before you serve it and adjust the seasonings accordingly.
  • Serve the mustard with your favorite foods: Champagne dill mustard is a versatile condiment that can be used with a variety of foods. It's great on sandwiches, burgers, hot dogs, and chicken. It can also be used as a dipping sauce for vegetables or chips.

Conclusion:

Champagne dill mustard is a delicious and easy-to-make condiment that adds a touch of elegance to any meal. It's perfect for entertaining or everyday use. With its bright flavor and beautiful color, this mustard is sure to be a hit with everyone who tries it.
