CHAMORRO SHRIMP PATTIES

1/3 cup white balsamic vinegar
1/3 cup ketchup
1½ teaspoons granulated sugar
¼ cup water
Pinch of kosher salt
Pinch of cayenne pepper, or more if you like it spicy
½ teaspoon freshly ground black pepper
Vegetable or canola oil, for frying
1 pound raw shrimp, at least 25-30 per pound in size
¼ cup celery, minced fine
½ cup carrots, shredded
1 cup canned kernel corn, drained
½ cup frozen peas, thawed
1 whole egg
¾ cup canned evaporated milk
1 cup all-purpose flour
1/8th teaspoon cayenne pepper
½ teaspoon celery salt
1 ½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 teaspoons baking powder

Steps:

  • For the pepper sauce, mix all ingredients in a small bowl. Set aside.
  • Fill a deep heavy pot with about six inches of the oil. A Dutch Oven works great for this. Heat the oil to 350 degrees F and hold at that temperature.
  • Peel, devein and coarsely chop the shrimp but leave some bigger pieces.
  • In a medium to large bowl place chopped shrimp, celery, carrots, corn, peas, egg and milk. Mix to combine.
  • In a separate smaller bowl mix flour, cayenne, celery salt, kosher salt, pepper and baking powder.
  • Stir to combine then stir into the wet mixture.
  • Once the oil is hot, using a one ounce ice cream scoop (#40 scoop), scoop about 12 fritters into the hot oil making sure you give them a nudge with a strainer or tongs so they float and don't stick to the bottom.
  • Fry for five minutes, tipping them with the strainer or tongs so they flip and cook on both sides.
  • After five minutes, remove one and check center. If done, remove all to a platter lined with paper towels.
  • Once oil is back to temperature, cook remaining fritters. Our batch made 26 fritters.
  • Serve hot with the Peppery Vinegar Sauce.

4 large eggs
4 cans (6 ounces each) shrimp, rinsed and drained, or 2 cups peeled and deveined cooked shrimp (31-40 per pound)
1/2 pound haddock, cooked and flaked
1-1/2 cups pancake mix
2 tablespoons cornmeal
1/2 teaspoon dried parsley flakes
1/2 teaspoon celery salt
1/4 teaspoon ground mustard
1/4 teaspoon paprika
1/2 cup dry bread crumbs
3 to 4 tablespoons canola oil
8 hamburger buns
Optional: Lettuce leaves, tomato slices, onion slices and Sriracha mayonnaise

Steps:

  • In a large bowl, beat the eggs. Add the shrimp, haddock, pancake mix, cornmeal, parsley, celery salt, mustard and paprika; mix well. Shape into 8 patties. Coat with bread crumbs., In a large cast-iron or other heavy skillet, cook patties in oil over medium-high heat until golden brown, 2 minutes on each side. Serve on hamburger buns. Top with lettuce, tomato, onion and mayonnaise as desired.

2 eggs
1 can(s) 10 ounce can of evaporated milk
2 c all purpose flour
2 tsp baking powder
1 1/2 tsp (or 2 teaspoons) salt
1 tsp black pepper
2 tsp garlic powder
2 lb medium raw shrimp, peeled, deveined, and chopped
1 10 ounce package of frozen mixed vegetables (completely thawed and drained)
4 c vegetable oil (for deep frying)
2 c shredded crab meat (optional)

Steps:

  • 1. combine eggs and evaporated milk in a bowl and beat together.
  • 2. Add in flour, baking powder, salt, pepper, garlic powder, and other seasoning and mix.
  • 3. Add in shrimp. crab meat (if you're using it), and mixed vegetables and combine.
  • 4. Heat oil in a skillet on medium-high
  • 5. When the oil is heated, drop large spoonfuls of the batter into the oil and fry until golden. Use a bamboo skewer and poke it through the patty to make sure it's done. If the skewer comes out clean, then it's just right.
  • 6. Drain oil over paper towels and serve.

  • In a mixing bowl, beat the eggs with the evaporated milk.
