SPICED MILK TEA (MASALA CHAI)
Enjoyed by millions in India, masala chai, a spiced, sweetened black tea mixed with milk, is now popular around the world. It is sold all over India by chai wallahs, or tea vendors, who pour the tea from big kettles into small cups.

Steps:
- Place 3 cups water in a small saucepan; add cardamom, cloves, cinnamon, ginger, and vanilla bean and scrapings. Bring to a boil over high heat. Reduce heat to low; simmer until mixture is aromatic, about 15 minutes. Whisk in honey; drop tea bags in pan. Turn off heat, and let steep 3 minutes.
- Strain tea through a fine strainer or a coffee filter into a warmed serving pot. Heat milk in same saucepan over medium-high heat, about 3 minutes. Do not let milk come to a boil because it will separate. Pour into serving pot with the tea, and stir well to combine. Serve immediately, with more honey on the side if desired.
BETTER CHAI FROM A CHAI TEA BAG
The directions on my chai tea bags say, "steep 3-5 minutes, then add milk." The result is not very good; it's watery and not spicy at all. This recipe is my "rescue" for chai tea bags. It's not exactly chai like you get in India, but it's closer at least!

Steps:
- Place water and tea bag in a small saucepan over high heat.
- Bring to a boil, then lower heat and simmer for about ten minutes, until the water is reduced by half. If less than 1/2 cup of water remains after ten minutes, just top up with more water.
- Remove tea bag and stir in milk and honey or sugar. Allow the chai to just return to a boil, then pour into a mug and serve.
- Note that if you let chai sit for too long, it will form a "skin." This is normal, but if you'd rather not have it, periodically stir your chai while you enjoy it.

CHAI TEA WITH SOY MILK
Chai tea has been a favorite refreshment in India for centuries. Essentially a blend of tea, ground spices, honey, and milk, it can be enjoyed hot or cold. Our version, which replaces cow's milk with soy milk, is served hot.

Tips:
- Use loose leaf tea for the best flavor. Loose leaf tea has a higher surface area than tea bags, which allows for more flavor to be extracted during steeping.
- Use fresh, cold milk. Fresh milk will give your chai tea a richer flavor and creamier texture than milk that has been sitting in the refrigerator for a while.
- Don't over-steep the tea. Over-steeping the tea will make it bitter. Steep the tea for 3-5 minutes, or to your desired strength.
- Add sugar or honey to taste. Chai tea is traditionally sweetened, but you can adjust the amount of sugar or honey to your liking.
- Garnish with spices. A sprinkling of cardamom, cinnamon, or nutmeg will give your chai tea an extra boost of flavor.
Conclusion:
Chai tea with milk is a delicious and comforting drink that can be enjoyed any time of day. It's easy to make and can be customized to your liking. So next time you're looking for a warm and flavorful beverage, give chai tea with milk a try.
