Convenient (and relatively inexpensive) way to have chai 'lattes' at home. The cardamom can be a bit expensive; try looking in the bulk section of a health food store. If you need to buy a jar of it, don't worry - it will make several batches!

CHAI TEA CONCENTRATE MIX

I've tried the powdered versions but this one has the best flavor to me. I love this iced for the warm Florida days but it's lovely in a cup of hot tea after dinner with a cookie. Try stirring it into a milkshake- mmmmm!!

Time 5m

Number Of Ingredients 8

14 oz can sweetened condensed milk
5 tsp ground cardamom
1 1/2 tsp ground cinnamon
1 1/2 tsp ground ginger
1/2 tsp ground allspice
1/2 tsp ground cloves
1/2 tsp ground black or white pepper
1/2 tsp freshly ground nutmeg

Steps:

  • 1. In a mason jar, combine all ingredients well. Store in refrigerator.
  • 2. TO USE: stir 1 Tbl. of mix into a 8 oz. hot tea of choice. Try it with different flavors of tea. Pour over ice or drink hot.

Tips:

  • Use freshly ground spices for the best flavor. You can grind them yourself using a mortar and pestle, or you can purchase pre-ground spices.
  • If you don't have a cheesecloth bag, you can use a regular strainer lined with a paper towel.
  • Be careful not to overboil the tea concentrate. If you boil it for too long, it will become bitter.
  • Store the tea concentrate in a jar or bottle in the refrigerator for up to 2 weeks.
  • When you're ready to drink chai tea, simply mix the concentrate with hot water or milk. You can also add sugar or honey to taste.
