Steps:

2 cinnamon sticks
3 whole cloves
10 cardamom pods
1 piece (about 2 inches) fresh ginger, washed and thinly sliced, plus 8 paper-thin slices for garnish
3/4 cup pure maple syrup
1 quart apple cider
1 to 2 cups seltzer

Steps:

  • Bring spices, ginger, syrup, and 1/2 cup water to a boil in a small saucepan. Reduce heat to medium-low, and simmer 2 minutes. Let stand at room temperature 1 hour. Strain, and discard solids.
