My mom made these while I was growing up, and now I make them for my family. Always a favorite at Christmas parties too! Easy to make. Recommend to keep squares in fridge right up until serving.

3 cups toasted oat cereal (such as Cheerios®)
3 cups corn flake cereal
1 cup peanuts
1 cup brown sugar
½ cup corn syrup
½ cup butter
½ cup peanut butter
1 teaspoon vanilla extract

Steps:

  • Combine oat cereal, corn flake cereal, and peanuts together in a large bowl.
  • Mix brown sugar, corn syrup, and butter together in a saucepan; bring to a boil. Remove from heat and stir in peanut butter and vanilla extract until smooth.   • In a large bowl, combine the cereal, brown sugar, peanuts and coconut. Drizzle with butter; stir until combined. , Press half of the mixture into an ungreased 13-in. x 9-in. dish. I didn't have the recipe, so I went into cyberspace and found an award winning similar recipe from the HoosierKitcheNet! This dessert is great in the summer, or anytime of the year when you might be craving ice cream with a crunch! (Prep time includes time for freezing dessert).

Number Of Ingredients 6

5/8 cup butter, melted
3 cups Corn Chex or 3 cups Rice Chex, crushed
1 cup brown sugar
1 cup coconut
1/2 cup chopped pecans or 1/2 cup almonds, slivered and toasted
1/2 gallon ice cream, slightly softened (I prefer good 'ol vanilla, but fudge ripple and strawberry are close seconds! Choose your favorite!)

Steps:

  • Mix together the above ingredients except the ice cream.
  • Reserve 1 1/2 cups of mixture for topping.
  • Pat the remaining mixture into bottom of a greased 9x13" pan.
  • Spread 1/2 gallon of softened ice cream on the cereal mixture in pan.
  • Sprinkle the 1 1/2 cups reserved cereal mixture on top of ice cream.
  • Cover and freeze several hours, or overnight.
  • Cut into squares.

3 tablespoons packed brown sugar
1/2 cup butter, melted
1 container (28 oz) Häagen-Dazs™ vanilla ice cream, softened
1 1/2 cups Golden Grahams™ cereal
1 container (28 oz) Häagen-Dazs™ chocolate ice cream, softened
2 cups frozen whipped topping, thawed
1 jar (7 oz) marshmallow creme
1 cup Golden Grahams™ cereal
2 tablespoons chocolate-flavor syrup

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray.
  • In food processor, place cereal; cover and process until finely crushed. In medium bowl, mix crushed cereal and brown sugar with fork. Stir in melted butter until well blended. Press cereal mixture evenly in bottom of pan. Bake 8 to 10 minutes or until set. Cool 30 minutes.
  • Spread softened vanilla ice cream on top of baked crust. Top with 1 1/2 cups cereal; press pieces into ice cream layer. Freeze 1 hour.
  • Remove from freezer; evenly spread softened chocolate ice cream on top of cereal layer. Cover; place in freezer about 3 hours or until firm.
  • In medium bowl, stir whipped topping and marshmallow creme until well blended; spread on top of bars. Sprinkle 1 cup cereal on top; drizzle with chocolate syrup. Cut into 5 rows by 4 rows. Store covered in freezer.
