CELERY ROOT PUREE

Celery Root Puree image

I joke that celery root tastes like celery if celery actually tasted good; for the most part, this is true. The flavor is quite mild and pleasant, and the texture is somewhat similar to mashed potatoes. This simple puree is a very versatile side dish, but the tasty root will also work sliced thin and layered in a gratin, either with or without potatoes. I hope you give this great fall and winter vegetable a try soon.

CELERY AND WALNUT (OR HAZELNUT) TZATZIKI

Celery and Walnut (or Hazelnut) Tzatziki image

Tzatziki, the creamy Greek salad made with cucumber, yogurt and lots of garlic is already one of my favorite dishes, and I think I may like this adaptation made with celery even more. The celery never loses its crunch or distinctive flavor. Walnuts and walnut oil add another dimension, which is nutty and crunchy. You could also try something new and use hazelnuts and hazelnut oil. Serve this as part of a mezze spread, as an appetizer or as a salad.

CELERIAC, HAZELNUT & TRUFFLE SOUP

Celeriac, hazelnut & truffle soup image

Rustle up this healthy vegan celeriac and hazelnut soup as a starter on Christmas Day. Truffle oil adds a bit of luxury, or leave it out for a simple supper on a winter's night

Provided by Sophie Godwin - Cookery writer

Categories     Soup, Starter

Time 1h5m

Number Of Ingredients 11

1 tbsp olive oil
small bunch thyme
2 bay leaves
1 onion, chopped
1 fat garlic clove, chopped
1 celeriac (about 1kg), peeled and chopped
1 potato (about 200g), chopped
1l veg stock (check the label to ensure it's vegan - we used Marigold)
100ml soya cream
50g blanched hazelnuts, toasted and roughly chopped
1 tbsp truffle oil, plus an extra drizzle to serve

Steps:

  • In a large saucepan, heat the oil over a low heat. Tie the thyme sprigs and bay leaves together with a piece of string and add them to the pan with the onion and a pinch of salt. Cook for about 10 mins until softened but not coloured.
  • Stir in the garlic and cook for 1 min more, then tip in the celeriac and potato. Give everything a good stir and season with a big pinch of salt and white pepper. Pour in the stock, bring to the boil, then simmer for around 30 mins until the vegetables are completely soft.
  • Discard the herbs, then stir through the cream, remove from the heat and blitz until completely smooth. Stir through 1/2 tbsp truffle oil at a time and taste for seasoning - the strength of the oil will vary, so it's better to start with less oil and add a little at a time.
  • To serve, reheat the soup until piping hot, then ladle into bowls and top with the hazelnuts, some black pepper and an extra drizzle of truffle oil.

Tips:

  • Choose the right celery root: Look for a firm, unblemished celery root that is about the size of a grapefruit.
  • Peel the celery root carefully: Use a sharp knife to peel the celery root, being careful not to remove too much of the flesh.
  • Cut the celery root into small pieces: This will help it cook evenly.
  • Roast the celery root until it is tender: Roasting the celery root will bring out its natural sweetness and flavor.
  • Make the puree: Once the celery root is roasted, it can be easily pureed in a food processor or blender until smooth.
  • Season the puree to taste: Add salt, pepper, and other seasonings to taste.
  • Toast the hazelnuts: Toasting the hazelnuts will enhance their flavor and make them more crunchy.
  • Garnish the puree with the toasted hazelnuts: This will add a nice finishing touch to the dish.

Conclusion:

Celery root puree is a delicious and versatile dish that can be served as a side dish or an appetizer. It is also a great way to use up leftover celery root. With its creamy texture and nutty flavor, celery root puree is sure to be a hit with your family and friends.
