CELERIAC SALAD WITH MUSTARD DRESSING

Celeriac Salad with Mustard Dressing image

Celeriac is a delicious yet often ignored vegetable. It needs to be scrubbed well and then have all the tough peel removed with a good sharp knife. When you cut the celeriac, the flesh darkens in contact with air, so immediately place the cut pieces into water and lemon juice until final preparation.

salt and pepper
1/2 teaspoon dry mustard

  • Chill well.
  • Serve on a bed of greens and if you wish garnish with strips of red& green sweet pepper.

Tips:

  • Choose the Right Celeriac: Select a celeriac that is firm and has a smooth, unblemished skin. Avoid celeriac that is soft or has brown spots.
  • Peel and Cut Celeriac Properly: Use a sharp knife to remove the skin of the celeriac. Cut the celeriac into thin slices or matchsticks for the salad.
  • Enhance the Flavor: To add extra flavor to the celeriac, you can roast it before assembling the salad. Roasting brings out the natural sweetness and nuttiness of the celeriac.
  • Make a Flavorful Dressing: The mustard dressing is a key component in this salad. Use a good quality mustard that has a well-balanced flavor. You can also experiment with different types of mustard, such as Dijon or whole grain mustard.
  • Add Some Crunch: For a textural contrast, add some crunchy elements to the salad. You can use chopped nuts, seeds, or croutons.
  • Serve Immediately: Celeriac salad is best served immediately after it is made. The celeriac will start to oxidize and turn brown if it is left in the dressing for too long.
