Number Of Ingredients 10

1 (8.5 oz box) corn muffin mix ((I use Jiffy.))
2 lg. eggs
1 stick butter, (melted (1/2 C))
14.75 oz can creamed corn
15 oz can whole kernel corn, (drained)
1 C sour cream
1 C grated sharp cheddar
1/2 medium yellow onion, ( diced)
1/4 tsp salt
1/4 tsp coarse ground black pepper

Steps:

  • Preheat oven to 350° degrees Fahrenheit. Spray an 8 x 11 or 9 X 13 pan with cooking spray.
  • In a large mixing bowl, mix all ingredients well. Pour mixture into spray cooking dish. Use a rubber spatula to remove all of the mixture from the mixing bowl. Place in a preheated oven and bake until cornbread pudding is golden brown and begins to pull away from the edges. There will be some cracking on the top and the center should be set with just a little jiggle.
  • An 8x11 pan should bake in 45 minutes. A 9 x 13 will bake in 20-30.

SWEET CORN BREAD PUDDING

Provided by Alton Brown

Categories     side-dish

Yield 6 to 8 servings

Number Of Ingredients 13

1/2 onion, diced fine
1-ounce unsalted butter
1/2 teaspoon thyme
1/2 teaspoon rosemary
1 (15-ounce) can creamed style sweet corn
1 cup heavy cream
2 eggs
1 teaspoon baking powder
1/2 cup yellow cornmeal, whole grain, stone ground
1/2 cup shredded Parmesan cheese
1 teaspoon kosher salt
Ground black pepper to taste
2 cups French bread, cubed

Steps:

  • Heat oven to 350 degrees. Sweat onions with butter and herbs in an oven safe skillet until translucent.
  • Combine corn, cream, eggs, baking powder, cornmeal, Parmesan, salt, and pepper in a large mixing bowl. Add cubed bread and fold to combine. Pour batter into skillet, right on top of the onion mixture. Bake 50 minutes, or until set. Cool slightly before serving.

Tips:

  • Use fresh or frozen corn kernels: Fresh corn kernels yield the best flavor, but frozen corn works well too. If using frozen corn, thaw it before adding it to the pudding.
  • Don't overmix the batter: Overmixing the batter can result in a tough pudding. Mix the ingredients just until they are combined.
  • Bake the pudding in a water bath: Baking the pudding in a water bath helps to prevent it from drying out. Place the pudding dish inside a larger baking dish filled with hot water.
  • Let the pudding cool slightly before serving: The pudding will continue to cook as it cools, so let it cool for at least 10 minutes before serving.

Conclusion:

Celebration Cornbread Pudding is a delicious and versatile dish that can be served as a side dish, main course, or dessert. It's easy to make and can be customized to your liking. Whether you're looking for a traditional Southern dish or a new twist on a classic, Celebration Cornbread Pudding is sure to please everyone at your table.
